Overview

The Robot Coupe Blixer® is a versatile emulsifier-mixer designed for professional use, combining the functionalities of a cutter and a blender-mixer. This innovative appliance is engineered to efficiently prepare mixed liquid or semi-liquid, raw or cooked meals, offering a superior alternative to traditional blenders that often struggle with solid foods. Its robust design and user-friendly features make it an indispensable tool in various professional settings, from hospitals to restaurants and delicatessens.

Function Description

The Blixer®'s primary function is to process a wide range of food items into various consistencies, from minced to pureed and liquidized. In hospital settings, it excels at preparing spoon-feeding meals such as minced meats, fish, vegetable purees, mousses, and fruit compotes. For semi-liquid feeding, it can dilute spoon-feeding preparations, creating items like minced meat with gravy, purees with broth or milk, and creamed soups. It is also capable of liquidizing preparations for tube feeding. In restaurants and delicatessens, the Blixer® is ideal for making butter mixtures (e.g., snail, salmon, anchovy butter), various sauces (e.g., green sauce, mayonnaise, remoulade, aioli, emulsified sauces), grinding ingredients for bisques (e.g., lobster, scampi, seashells), and processing herbs, seeds, and powders. It also facilitates the homogenization of creams, mixed components, and varied ingredients.

Usage Features

The Blixer® is designed for ease of use and safety. It should be operated on a clean, sturdy counter or table, ensuring adequate air circulation to prevent motor overheating. All four feet must be in place for stability. Before plugging in, users must verify that the power supply matches the machine's serial number plate and that it is connected to a grounded outlet with Ground Fault Circuit Interrupter (GFCI) protection. The motor shaft's counter-clockwise rotation should be checked before installing blades.

The control panel features a red "Off" switch, a green "On" switch, and a black "Pulse" control. The Blixer® 2, 3, and 4 models operate at a single speed of 3,450 rpm, while the Blixer® 4 V. offers variable speeds from 300 to 3,600 rpm.

Assembly is straightforward:

  1. Place the bowl onto the motor base with the handle facing forward, turning it slightly off-center to the left before lowering it.
  2. Turn the bowl clockwise to lock it onto the motor base tabs.
  3. Place the blade assembly onto the motor shaft, rotating it until it drops into place, ensuring the bottom blade is level with and just off the bottom of the bowl.
  4. Position the scraper arm handle, aligning it with the arrow. Hold the scraper arm in place and press down on the handle to compress the two lid wipers, then turn clockwise.
  5. Locate the downward-facing tab on the bowl lid, place the lid on the bowl with the tab over the bowl handle, and lock the bowl clamps over the lid.

The machine should only be operated when processing is underway, ideally on a 50% duty cycle, as preparation time typically exceeds processing time, extending the machine's life. When processing frozen products, the size should not exceed 1 inch (2.5 cm). Users are advised to monitor the mixture closely to achieve desired results.

Safety features are integral to the Blixer®'s design. The blades are extremely sharp and must be handled with care. The Blixer® 2, 3, 4, and 4 V. models are equipped with a safety device and motor braking system that stops the motor when the lid is opened. To restart, simply close the lid and press the green button. It is crucial to allow the blades to come to a complete stop before opening the lid to prevent splashing. These models also include a thermal protector in the motor winding that automatically stops the motor if overloaded. If this occurs, the machine should be allowed to cool completely before restarting, as the thermal protector will reset automatically. Additionally, Blixer® machines are equipped with a manually resettable overload circuit-breaker, which will trip if the machine is overloaded. Again, allow the machine to cool before resetting the breaker located on the motor base.

Maintenance Features

Proper maintenance is crucial for the longevity and optimal performance of the Blixer®. As a precaution, the appliance should always be unplugged before cleaning. The motor unit should never be immersed in water; instead, clean it with a damp cloth or sponge, ensuring no water penetrates the shaft seal or switches. A small brush can be used to clean around the shaft seal, removing all food debris. After cleaning with a mild detergent, rinse with a damp cloth, sanitize, and dry thoroughly with a soft cloth, removing all liquids from seal areas. Pure bleach should never be used; detergents should always be diluted according to manufacturer instructions.

The bowl, blade, cap, lid, and wiper assembly are dishwasher safe. Before washing, pre-rinse attachments to remove bulk food. A stiff bristle brush or power sprayer faucet attachment can help dislodge food from crevices. The dishwasher should have an industry-standard wash, rinse, and sanitization cycle, followed by air-drying. Hand washing is recommended for plastic and rubber parts to extend their life, as high dishwasher temperatures can shorten them. Cut-resistant gloves should be worn when cleaning the blade.

Regular maintenance checks are recommended:

  • Blade: The sharpness and wear of the blades directly impact cutting quality. Blades are wearing parts and should be replaced occasionally to maintain consistent product quality. The blade cap can be removed for cleaning by inserting a screwdriver from the bottom and knocking the cap out the top, always wearing cut-resistant gloves.
  • Motor Seal: Periodically examine the motor seal to ensure it maintains a liquid-tight seal around the motor shaft. With proper care, it can last a year or more, but should be replaced every three to six months or whenever wear is noted. An authorized repair agency should perform this replacement.
  • Bowl Locking Washer: Located below the bowl, this washer holds the bowl in place. It should be replaced if it becomes worn.
  • Wiper Assembly: This assembly includes three rubber wipers that will need replacement when worn.

It is important to use detergents suitable for plastic parts, as highly alkaline agents (e.g., high levels of caustic soda or ammonia) can rapidly degrade certain plastics. The appliance should never be operated if the power cord or plug is damaged, or if the appliance malfunctions in any way. If a malfunction occurs, discard any food being processed and refer service to qualified maintenance technicians. Do not attempt to open the motor housing, as there are no user-serviceable components inside. Control component repairs should be referred to qualified technicians. Seals should be replaced every 3 to 6 months and lubricated with food-safe grease. Maintaining and checking attachments is particularly important due to corrosive ingredients like citric acid.
