TIP: For aromatic steaming and fine taste, the following
ingredients, for example, can be added to the liquid:
3 Spices: Cinnamon sticks, ginger, bay leaves, juniper berries,
coriander, star anise
3 Herbs: Rosemary, dill, sage, chervil, tarragon, marjoram,
mint, chilli
3 Vegetables: Garlic, shallots, fennel, celery, leeks
3 Miscellaneous: Wine, broth
The flavoured stock can then be used to make sauces.
5.2. Steaming times
If different foods are steamed together, it is important to
put the food with the longest steaming time in the pan first,
followed by further dishes at a delayed time.
The steaming times indicated are average guide values and are
dependent on the size and quality of products, etc. If in doubt,
steam the food for slightly less time, so as not to overcook
them.
