The Rühle SR 2 BiTurbo Cutting Centre is a food processing machine designed for cutting frozen foodstuffs into cubes, strips, and slices. It is manufactured by Rühle GmbH, a German company specializing in food technology.
Function Description:
The primary function of the Rühle SR 2 BiTurbo is to precisely cut frozen food products. It is capable of producing various cuts, including cubes, strips, and slices, with special accessories available for chop slices. The machine operates with a cutting speed of 180 sections/min (pulsating) or 320 sections/min (continuous), achieving a maximum cutting output of 3000 kg/h. The cut-off length can be adjusted from 1 to 30 mm. The machine is designed for use with Euro standard boxes (E1, E2, E3) and features a lifting aid with a load capacity of 120 kg. Operation of the machine is facilitated via a tablet PC with Rühle application software, accessed through a browser and IP address.

Usage Features:
The machine is intended for use by persons over 18 who have been instructed in its operation. The room temperature during operation must not exceed 12 °C for food hygiene reasons. The machine's design emphasizes safety, with numerous warnings and instructions to prevent injury. For instance, reaching into the machine or funnel during operation is strictly prohibited, as is manipulating or bypassing safety devices. Cut protection gloves must be worn when handling blades. The lifting aid is designed for specific Euro standard boxes and must not be overloaded or used for lifting persons. The tablet PC interface should only be operated by touch, not with objects like blades. Installation and commissioning should only be carried out by a Rühle service technician or authorized personnel. The work area around the machine requires specific clearances: at least 0.5 m on all sides, 1 m for maintenance, and 1.2 m if used as a passageway. The machine must be set up on a solid, level floor with sufficient load-bearing capacity.
Maintenance Features:
The Rühle SR 2 BiTurbo is designed for comprehensive cleaning and regular maintenance to ensure optimal performance and longevity.
- Cleaning: All parts that come into contact with food products can be thoroughly cleaned. Cleaning staff must immediately report any defects or hydraulic oil leaks to the supervisor and use specified cleaning agents and disinfectants. Personal protective equipment, as outlined in the safety instructions (e.g., protective gloves, eye protection, breathing mask, protective clothing), must be worn during cleaning. High-pressure cleaners are permitted only for outside surfaces, the inside of the knife protection box, the (working) funnel, the cutting chamber, and the conveyor belt. The tablet PC and its holder must be cleaned manually and not exposed to water jets.
- Cleaning Procedure: Before cleaning, the machine must be put into "Cleaning mode" via the tablet PC to move the die plate to the cleaning position. Components such as the undercarriage with Euro boxes, slider, die plate, cut-off knife, and grate frame with knife levels must be removed. The transport belt also needs to be removed by opening the quick-action tape clamp and lifting the feather key from the guide groove.
- Regular Care (at least once per week):
- Disassemble the machine according to cleaning instructions and check for parts moving with difficulty, material abrasion, or other signs of wear.
- Remove cut-off knives and check for damage or broken blades.
- Sharpen grate knives in the knife levels using a Rühle knife sharpener on a slip-resistant underlay, applying only light pressure. Grate knives must be resharpened at least every 50 working hours.
- Check the slider (funnel closure) and its guide pins for damage and abrasion, removing sharp edges.
- Check the guide rails of the slider and grate frame, removing sharp edges.
- Check the rollers of the eccentric shafts and all grate frames for easy running, axial play, and abrasion. Replace defective rollers or knife levels if necessary.
- Visually inspect all machine sides and accessible parts for changes or damages. The machine must be shut down if any damage is found.
- Visually inspect for hydraulic oil loss under the machine.
- Regular Maintenance (every 2000 hours of operation or at least once per year):
- Inspect all safety devices.
- Perform a test run with the machine open (with caution due to moving parts).
- Carry out all inspection and resharpening tasks specified under "Regular Care."
- Change the oil of the hydraulic system (refer to technical data for filling specifications).
- Perform a leak test of the hydraulic system.
- Check hydraulic hoses for damages or cracks; defective hoses must be replaced. Hydraulic hoses must be replaced at intervals of 2 years (for increased loads/usage) or 6 years (for normal loads/usage), as indicated by the embossed date.
- Check and adjust the distance between the cut-off knife and grate frame if necessary.
- Grease all moving parts in the machine compartment (chain and sprockets on the lifting aid drive).
- Read operating hours and error logs on the tablet PC to identify any faults.
- Read the error memory (frequency and servo converter).
- Repairs: Any repair work, especially on the hydraulic or electrical system, must be carried out by qualified Rühle service technicians. The machine must always be disconnected from the mains during such work, and the hydraulic system depressurized. A waiting time of at least 10 minutes after switching off is required for electrical components to discharge. Only Rühle spare parts and accessories should be used.
- Disposal: All materials and operating fuels must be separated and disposed of according to national regulations. Components containing oil include the hydraulic system (unit, cylinder, hoses), grate drives 1 and 2, and the cutter drive. All gear units/motors are equipped with oil drain plugs, except for the conveyor belt drive gearbox, which must be opened. Components with lubricating grease include the lifting aid drive (chain, sprockets).
