Function Description:

The Smoke Hollow Gas Smoker is an outdoor appliance designed for smoking food using LP (Liquefied Propane) gas as fuel and flavoring hardwood chips. It provides a controlled environment for slow cooking and infusing food with smoke flavor. The smoker is intended for personal, non-commercial use.

Important Technical Specifications:

  • Fuel Type: LP (Liquefied Propane) gas only. Not to be used with non-self-contained LP-gas supply systems.
  • LP Gas Cylinder: Must be a 20-pound, vertical standing vapor withdrawal type tank, constructed and marked in accordance with U.S. Department of Transportation (DOT) CFR 49 or National Standards of Canada, CAN/CSA B339 specifications.

    • Maximum capacity: 20 pounds

Usage Features:

  • Outdoor Use Only: This smoker is strictly for outdoor use on a level, stable, non-combustible surface (e.g., brick, concrete, dirt).
  • Unattended Operation: Never operate this smoker unattended.
  • Assembly: Requires a Phillips head screwdriver and pliers or 3/8" & 7/16" wrench. Two people are recommended for assembly due to the smoker's weight.
  • Seasoning (Break-in) Process: Before initial use, the smoker must be "seasoned" by burning it at the lowest temperature for 45-60 minutes without food. This seals the paint and interior, enhancing flavoring, durability, and performance.
  • Adding Wood: Flavoring hardwood chips are placed in the wood chip box. The amount and type of wood are user-dependent. Pre-soaking wood chips or wrapping them in perforated aluminum foil can prolong smoke production. Most smoke flavoring occurs within the first hour of cooking.
  • Adding Water: The water bowl should be filled with water up to 1 inch (2.5 cm) below the rim. For hot smokers, use a clean cup or watering can to add water without pulling the bowl out. Lining the water bowl with aluminum foil is recommended for easier cleaning.
  • Cooking Grids: Can be inserted into desired rack positions. Grid wires should run front to back for better food access.
  • Lighting Procedure: Involves checking for leaks, opening the smoker door, ensuring no venturi tube/burner blockage, setting the control knob to "OFF," opening the LP cylinder valve 1-1/2 turns counter-clockwise, then pushing and turning the burner control knob to HIGH/LIGHT while pressing the igniter button. Maintenance Features:

  • Leak Testing: Perform before each use by applying a soap solution (3:1 soap to water ratio) to all gas flow connections and fittings. Bubbles indicate a leak.
  • Cleaning:
    • Water bowl and cooking grids: Clean with hot, soapy water, rinse, and dry thoroughly. Lightly coat with cooking oil or spray.
    • Venturi and burner: Frequently check and clean for insects and nests to prevent clogging.
    • Smoker cabinet (inside and outside): Clean with a damp cloth. Avoid spray-washing with a water hose. Wipe away all moisture. Lightly coat the interior with cooking oil or spray to minimize rust.
  • Rust Treatment: If rust appears on the exterior, clean with steel wool or emery cloth and use heavy-duty, heat-resistant paint. Never apply additional paint to the interior after seasoning.
  • Hose and Regulator: Inspect before each use for abrasion, wear, cuts, or leaks. Replace if damaged. Handle carefully to prevent contamination. Hang the regulator hose from the side handle using the S-hook when not connected to the LP tank to prevent dirt collection.
  • Flame Check: Inspect burner flames during use. A good flame is blue with a yellow tip (about 1 inch long). Excessively yellow or irregular flames may indicate oil residue, food deposits, or poor regulator-to-venturi attachment. Clean burner surface and holes if needed.
  • Storage: Store outdoors, out of reach of children, in a dry, protected location. If stored indoors, the LP cylinder must be disconnected and removed. Keep the smoker covered when not in use.
  • Handling: Use caution when lifting or moving; two people are recommended. Allow the smoker to cool completely before handling. Always wear protective gloves or oven mitts when handling hot components.
