Overview

This document is an instruction manual for the ChefQuip HI & HA-Series Mixers, including models SP-100, SP-22HI, SP-22HA, SP-30HI, SP-40HI, SP-50HI, SP-60HI, and SP-A80HI. These are planetary mixers designed for food processing applications.

Function Description:

The ChefQuip HI & HA-Series Mixers are multi-functional planetary mixers used for various food processing tasks such as mixing, whipping, and kneading. They are designed for safe and efficient operation in commercial kitchens. The mixers utilize different agitators (beater, whisk, spiral dough hook) to perform specific tasks, from firm mixes like pastry and cakes to light mixes like whipped cream and egg whites, and heavy mixes like dough.

Important Technical Specifications:

  • Electrical Requirements:
    • Minimum operating temperature: +5°C
    • Maximum operating temperature: +40°C
    • Relative humidity: Not exceeding 95% at +40°C
    • Altitude: Up to 1000m
    • Storage temperature: -25°C to +55°C (short periods up to +70°C for 24h)
    • Designed for TN power system.
    • SP-100, SP-22HI, SP-22HA: Supplied with a trailing lead fitted with a 13amp moulded plug.
    • SP-30HI, SP-40HI, SP-60HI (230 Volt single Phase): Fitted with a colour-coded three-core cable (Brown: Live, Blue: Neutral, Green/Yellow: Earth).
    • Shaft rotation: Must be clockwise. If counterclockwise, wires R.S.T. (USA) L1, L2, L3 (Europe) need to be replaced.
    • Leakage current: No greater than 1 mA/KW.
    • Over-current protection device (e.g., fuse or NFB) or Residual Current Device (GFCI) is recommended.
  • Noise Levels (A-weighted sound pressure level, K in decibels: 4.0 dB (A) according to EN ISO 4871):
    • SP-100: 67.3 dB
    • SP-22HI and SP-22HA: 59.4 dB
    • SP-30HI: 64.4 dB
    • SP-40HI: 61.9 dB
    • SP-50HI: 60.9 dB
    • SP-60HI: 60.1 dB
    • SP-A80HI: 59.1 dB
  • Capacity: Varies by model and agitator/product. Overloading will damage the mixer and void the warranty. Batch size reduction of 10% is recommended for chilled flour, water below 20°C, ice, or high gluten flour.
  • Motor Overload Protection: The mixer is equipped with motor overload protection. If it shuts off, reduce batch size and wait 2 minutes before restarting.
  • Gears: Heat-treated hardened steel alloy gears, 25% thicker than industry's leader, with abrasion-resistant transmission design.
  • Motor: Efficient, custom-made, powerful motor with high torque transmission for heavy loads.

Usage Features:

  • Controls:
    • Emergency Stop (Red Button): Immediately stops the machine.
    • Start (Green Button): Starts the mixer.
    • Timer Knob: Allows for timed operation (1 to 15 minutes) or untimed manual control. Not available on Model SP-100.
    • Gear Lever: For changing speeds. The mixer must be STOPPED before changing speed.
    • Bowl Raise/Lower Buttons (D & E): Available on SP-A80HI for powered bowl lift.
  • Safety Features:
    • Bowl Guard: Removable, electrically interlocked. The mixer will not operate unless the guard is locked into position and the bowl is raised.
    • No Volt Release: Prevents automatic restart after a power failure; the start button must be pressed again.
    • Additions Chute: Located on the right-hand side of the bowl guard for adding ingredients during mixing.
    • Attachment Hub: For operating attachments like meat mincers and vegetable slicers. Attachments should only be fitted when the mixer is stationary.
    • Pusher Plate: Must be used with attachments like the VH-12 Meat Mincer and V99S Vegetable Slicer.
  • Agitators:
    • Beater: For firm mixes (light pastry, cakes, biscuits, icings, fillings, mashed vegetables).
    • Spiral Dough Hook: For heavy mixes (dough, pie pastry).
    • Whisk: For light mixes (whipped cream, mayonnaise, egg whites, pancakes, soufflés).
    • Optional Agitators: "E" Dough Hook, "C" Wing Whip, Heavy Duty Wire Whip.
  • Bowl Lift: Manual bowl lift handle (wheel) for most models. SP-A80HI features a powered bowl lift.
  • Bowl Scraper (Optional Accessory): Used with the Beater or Wire Whip agitator to continuously scrape the inside of the mixing bowl, reducing labor, recipe time, and increasing productivity and product consistency.
  • Speed Selection: Always start at the lowest speed and progressively increase. Recommended speeds are provided in tables for different agitators and models. Model SP-A80HI automatically shuts off if speed is changed during operation.
  • Capacity Chart: Provides recommended capacities for various mixes, emphasizing the importance of not overloading the mixer.
  • Attachments: The mixer can operate various attachments from the Attachment Hub. Lubricate the Drive Stud (D) with food quality grease or oil.

Maintenance Features:

  • Cleaning:
    • Always disconnect power before cleaning.
    • Wipe down the body with a damp cloth; do not spray or immerse in water.
    • Clean bowl pins, cradle areas, beater shaft, and tool sockets thoroughly.
    • Wash bowl and tools in hot soapy water, rinse, and dry.
    • Do not wash agitators in a dishwasher.
    • Ensure rear vents are not blocked to prevent overheating.
  • Lubrication:
    • Bowl Cradle Rods: Apply Vaseline or lubrication oil regularly.
    • Beater Shaft: Wipe and lightly lubricate with Vaseline to prevent rusting.
    • Gear Oil (SP-A80HI): Check the gear oil meter (indicator above half of red circle is full). Refill with Mobil lubricant “UBE HD 85W-140” when below the red circle. Servicing by trained technicians is recommended.
    • Gearbox Lubricant (Other Models): Refill every 5 years with Mobil lubricant “XHP 222” or Brugarolas “GRASA AGUILA PLEX 2-BOLSA”. Servicing by trained technicians is recommended.
    • Planetary Unit Lubricant: Add 2 pumps of TACBECON grease “GL-210” once a year. Reapply if strange noise occurs. Servicing by trained technicians is recommended.
  • Regular Checks (Annual Basis):
    • Check all bolts are tight and bowl guard is secure.
    • More frequent checks if machine is arduously used.
    • After replacing parts, screw back tightly with anti-leaking coat.
  • General Maintenance:
    • Any servicing or maintenance work must be carried out by a trained technician or electrician.
    • Do not insert any object into the motor's air vent or into the bowl.
    • Unplug the mixer when not in use for long periods.
  • Troubleshooting Guide: Provides a comprehensive list of common faults, checks, possible reasons, and required actions.
