The SPAR HI-Series Mixer is a robust and versatile food processing machine designed for various mixing tasks in commercial kitchens and bakeries. Manufactured by SPAR Food Machinery Mfg, Co., Ltd., and distributed by Robot Coupe Australia & NZ Pty Ltd, this planetary mixer is built for efficiency, safety, and durability.

Function Description

The primary function of the SPAR HI-Series Mixer is to thoroughly mix food ingredients using a planetary mixing action, where the agitator rotates on its own axis while also revolving around the inside of the bowl. This dual motion ensures comprehensive mixing, preventing unmixed pockets of ingredients. The mixer is capable of handling a wide range of consistencies, from light batters and whipped creams to heavy bread and pizza doughs, depending on the agitator and speed selected.

The mixer is equipped with a powerful motor and a robust transmission system, featuring heat-treated hardened steel alloy gears that are thicker than industry standards, ensuring high torque transmission for heavy loads and long-lasting, quiet operation. Overload protection is integrated to prevent damage to the motor and transmission in case of excessive loads.

Usage Features

The SPAR HI-Series Mixer is designed for user-friendly operation with several features aimed at enhancing convenience and safety:

  • Control Panel: The control panel typically includes an Emergency Stop button for immediate shutdown, a Start button to initiate mixing, and an optional Timer knob. The timer allows for automatic stopping of the machine after a selected interval (1 to 15 minutes), or users can opt for an untimed manual operation.
  • Speed Selection: The mixer offers multiple speed settings (e.g., 1st, 2nd, 3rd, and 4th speeds on some models) to accommodate different mixing requirements. It is crucial to stop the mixer before changing speeds to prevent damage. For models like SP-A80HI, SP-A80I, SP-B80HI, and SP-B80I, the machine will automatically shut off if the speed is changed during operation. Mixing should always begin at the lowest speed and gradually increase to the desired setting.
  • Bowl Lift System: The mixer features a bowl lift handle (wheel) to raise and lower the bowl cradle. Some models, such as SP-A80HI and SP-A80I, are equipped with a powered bowl lift system, allowing the bowl to be raised or lowered by pressing dedicated buttons (Bowl Raise Button and Bowl Lower Button) for effortless operation.
  • Bowl Guard: A removable bowl guard is a key safety feature, electrically interlocked to ensure the mixer only operates when the guard is correctly positioned and locked, and the bowl is raised. This prevents hands or utensils from coming into contact with moving parts during operation. The guard can be opened by rotating it clockwise and closed by rotating it counterclockwise until it locks. For cleaning, the guard can be completely removed by separating its handles and rotating it clockwise to release it from the ring catch.
  • Solid Safety Guard (Optional): An optional Solid Safety Guard is available for certain models (SP-100A, SP-200A, SP-30HA, SP-40HA, SP-60HA, SP-A80HI, SP-B80HI). This accessory includes an extra plastic cover on the bowl guard to fully cover any gaps on the grid, further minimizing exposure to flour dust, especially when mixing bread dough.
  • Agitator Selection: The mixer supports various agitators, including a flat beater, wire whip, and spiral dough hook, each suited for specific tasks.
    • Beater: Ideal for firm mixes like light pastry, cakes, biscuits, icings, fillings, and mashed vegetables.
    • Whisk: Best for light mixes such as whipped cream, mayonnaise, egg whites, pancakes, and soufflés.
    • Spiral Dough Hook: Designed for heavy mixes like dough and pie pastry.
    • "ED" Dough Hook and "E" Dough Hook: Used for mixing, folding, and stretching dough in various mixer capacities.
    • "C" Wing Whip: Suitable for heavy whipping tasks, including potatoes, butter, mayonnaise, and light icing.
    • Heavy Duty Wire Whip: For heavy whipping applications like sponge cakes and light marshmallow.
  • Attachment Hub: An optional attachment hub allows the mixer to operate various attachments, such as a V99S Vegetable Preparation unit (for slicing, grating, or shredding vegetables and fruits) and a VH-12 Mincer (for mincing meat, fish, and vegetables). Attachments should only be fitted when the mixer is stationary.
  • Bowl Scraper (Optional): An optional bowl scraper can be used with the beater or wire whip agitator. It continuously scrapes the inside of the mixing bowl while the agitator is running, reducing labor by eliminating the need to stop and manually scrape the bowl. This feature also helps reduce recipe time, increase productivity, and ensure consistent product results.

Maintenance Features

Proper maintenance is crucial for the longevity and optimal performance of the SPAR HI-Series Mixer. The manual outlines several maintenance procedures:

  • Cleaning: The mixer should be cleaned thoroughly after each use. The body should be wiped down with a damp cloth, avoiding hosing down or immersing any part of the mixer in water. Special attention should be paid to the bowl pins, cradle areas, beater shaft, and agitator sockets to prevent accumulation of mix. Bowls and tools should be washed in hot soapy water, rinsed, and dried. Agitators should not be washed in a dishwasher as it can adversely affect their polished finish.
  • Lubrication:
    • Bowl Cradle Rods: Periodically apply a small amount of Vaseline or lubrication oil to the rods on which the bowl cradle slides.
    • Beater Shaft: After cleaning, wipe and lightly lubricate the beater shaft with Vaseline to prevent rusting.
    • Attachment Hub: When using an attachment, lubricate the Drive Stud with food-quality grease or oil.
    • Gear Oil Meter (for SP-A80HI, SP-A80I, SP-B80HI, SP-B80I): These models feature a gear oil meter. Users should check the gear oil meter before use; if the indicator is below half of the red circle, the gear oil needs to be refilled. The recommended lubricant for these models is Mobil lubricant "UBE HD 85W-140." This procedure should be performed by trained technicians.
    • Gearbox Lubricant (for SP-100A to SP-60HA): For other models, the lubricant inside the gearbox should be refilled every 5 years using Mobil lubricant "XHP 222" or Brugarolas "GRASA AGUILA PLEX 2-BOLSA." This servicing should also be carried out by trained technicians.
    • Planetary Unit Lubricant: Add 2 pumps of grease to the planetary grease fitting once a year using TACBECON grease "GL-210." If strange noises occur, reapply grease. This task should be performed by trained technicians.
  • Annual Basis Checks: Annually, or more frequently for arduously used machines, all bolts should be checked for tightness, and the bowl guard should be secured. After replacing parts, screws should be tightened with an anti-leaking coat to prevent gear oil leakage.
  • Safety Precautions: Always disconnect or unplug the electrical power from the mixer before cleaning, servicing, or performing any maintenance. Do not insert any object into the motor's air vent or the bowl.
  • Troubleshooting: The manual provides a troubleshooting guide to help identify and resolve common issues such as no power, mixer failing to operate, noisy operation, loss of power, motor overheating, oil on the planetary shaft, or mixing tools getting stuck. It emphasizes that any servicing or maintenance work should be carried out by a trained technician or electrician.
