Salt free bread
Ingredients 500 gm 750 gm 1000 gm
Water 200 mL 270 mL 365 mL
All-purpose our 350 gm 480 gm 620 gm
Instant yeast (2) 0.5 tsp 1 tsp 1 tsp
Sesame seeds (1) 50 gm 75 gm 100 gm
Place the ingredients in the basin in the order indicated. Place ingredients indicated by (1)
and (2) in the corresponding dispensers. Choose the correct programme, weight of bread,
set the level of browning and press START.
Pumpernickel bread
Ingredients 1000 gm 1000 gm
Rye our 350 gm Honey 20 gm
Top patent our 150 gm Pre-ferment
100 gm (50 gm rye our,
50 gm warm water and
3 gm yeast)
Sugar 75 gm. Dry yeast (2) 2 tsp
Ground coriander 10 gm Salt 1 tsp
Vegetable oil 60 gm Water 310 gm
Malt (150 gm of malt our and
100 gm boiling water)
250 gm Coriander seeds as topping
Kvass extract (kvass wort) 10 gm
Pre-ferment: a day prior to baking bread, mix the rye our, warm water and yeast. After 3 hours,
place in the refrigerator. Add the following ingredients to the mould in the order in the order
indicated: water, oil, honey, and pre-ferment. Then add yeast, salt, kvass extract, malt, ground
coriander, sugar and our. Place the mould in the bread machine. Choose programme 8, as well
as the desired level of crust browning and press START. After the dough kneading, sprinkle in
the coriander. After programme is completed, turn o the bread machine, remove the mould
and extract the nished product.
Rye bread
Ingredients 500 gm 750 gm 1000 gm
Water 95 mL 140 mL 190 mL
Yogurt 60 gm 90 gm 230 gm
Salt 1/2 tsp 1 tsp 1 1/2 tsp
Sugar 10 gm 15 gm 20 gm
Sunower seed oil 1/2 tbsp 1 tbsp 1 1/2 tbsp
Malt 1 1/2 tbsp 2 tbsp 2 1/2 tbsp
All-purpose our 75 gm 110 gm 145 gm
Rye our 140 gm 210 gm 280 gm
Cocoa powder 10 gm 15 gm 20 gm
Instant yeast (2) 1 tsp 1 1/2 tsp 2 tsp
Ground coriander seeds 1/2 tsp 1/2 tsp 1 tsp
Place the ingredients in the basin in the order indicated. Place ingredients indicated by (2) in the
corresponding dispenser. Choose the correct programme, weight of bread, set the level of browning
and press START.
As desired: add coriander seeds to the dispenser before baking.
