Overview

The Toddy Cold Brew System is a comprehensive brewing device designed for making cold brew coffee and tea concentrate. It offers two distinct brewing methods: Method 1 (Dual Filtration) and Method 2 (Classic), catering to different preferences for cleanup, concentrate yield, and sediment levels.

Function Description:

The primary function of the Toddy Cold Brew System is to produce a smooth, rich, and low-acid cold brew concentrate from coarse-ground coffee or loose tea leaves. This concentrate can then be diluted with water, milk, or soy, and served hot or iced. The system utilizes a slow steeping process at room temperature, typically ranging from 12 to 24 hours for coffee and 12 hours for tea, to extract flavors without the bitterness associated with hot brewing methods.

Usage Features:

Method 1: Dual Filtration (Paper Filter Bag + Reusable Felt Filter)

  • Recommended for: Easy cleanup, maximum cold brew yield per batch, and compatibility with a wider range of coffee grind sizes and smaller tea leaves.
  • Coffee Concentrate Steps:
    1. Fill: Insert the stopper into the outside bottom of the brewing container. Dampen and insert the disc-shaped felt filter into the inside bottom. Open and place the paper filter bag into the brewing container. Pour 12 oz (340 g) coarse-ground coffee into the bag, followed by 7 cups (56 fl. oz./1.65 L) of water. Stir gently to ensure saturation. Tightly twist the top of the bag to close it.
    2. Brew: Steep coffee grounds at room temperature for 12 to 24 hours.
    3. Filter: Remove the stopper to let the concentrate flow into the glass decanter. Remove and discard the paper filter and coffee grounds.
    4. Serve: Recommended ratio of 1 part coffee concentrate to 3 parts water, milk, or soy. Mix to taste. Serve over ice for iced coffee or with steaming hot water for hot coffee.
  • Tea Concentrate Steps:
    1. Fill: Insert the stopper into the outside bottom of the brewing container. Dampen and insert the disc-shaped felt filter into the inside bottom. Open and place the paper filter bag into the brewing container. Pour 8 oz (230 g) of tea leaves into the bag, followed by 9 cups (72 fl. oz./2.13 L) of water. Stir gently to ensure saturation. Tightly twist the top of the bag to close it.
    2. Brew: Steep tea leaves for 12 hours.
    3. Filter: Remove the stopper to let the concentrate flow into the glass decanter. Remove and discard the paper filter and tea leaves.
    4. Serve: Recommended ratio of 1 part tea concentrate to 7 parts water, milk, or soy. Mix to taste. Serve hot or iced.

Method 2: Classic (Reusable Felt Filter Only)

  • Recommended for: The original tried-and-true method developed in 1964, producing a polished cold-brew concentrate with virtually no sediment. Requires only reusable felt filters.
  • Coffee Concentrate Steps:
    1. Fill: Insert the stopper into the outside bottom of the brewing container. Dampen and insert the felt filter into the inside bottom. Add 1 cup (235 mL) of water into the bottom of the brewing container, then 6 oz (170 g) of ground coffee. Slowly pour 3 more cups (710 mL) of water over the grounds in a circular motion. Wait 5 minutes, then add the remaining 6 oz (170 g) of ground coffee. Finally, slowly add the last 3 cups (710 mL) of water. DO NOT STIR (stirring can clog the filter). Lightly press down on the topmost grounds with the back of a spoon to ensure all grounds are wet.
    2. Brew: Steep coffee grounds at room temperature for 12 to 24 hours.
    3. Filter: Remove the stopper to let the concentrate flow into the glass decanter.
    4. Serve: Recommended ratio of 1 part coffee concentrate to 3 parts water, milk, or soy. Mix to taste. Serve over ice for iced coffee or with steaming hot water for hot coffee.
  • Tea Concentrate Steps:
    1. Fill: Insert the stopper into the outside bottom of the brewing container. Dampen and insert the felt filter into the inside bottom. Add 3 cups (710 mL) of water into the bottom of the Toddy brewing container, then 4 oz (115 g) of tea leaves. Slowly pour 3 more cups (710 mL) of water over the leaves in a circular motion. Then, add the remaining 4 oz (115 g) of tea leaves. Finally, wait 5 minutes and slowly add the last 3 cups (710 mL) of water. DO NOT STIR (stirring can clog the filter). Lightly press down on the topmost tea leaves with the back of a spoon to ensure all tea leaves are wet.
    2. Brew: Steep tea leaves for 12 hours.
    3. Filter: Remove the stopper to let the concentrate flow into the glass decanter.
    4. Serve: Recommended ratio of 1 part tea concentrate to 7 parts water, milk, or soy. Mix to taste. Serve hot or iced.

Coffee Grind Recommendation:

  • Use coarse-ground coffee. If purchasing from a coffee shop, ask for a French press grind. For home grinders without specific settings, grind beans for 75% of the time recommended for hot brew systems.

Stirring Guidelines:

  • Stirring is permissible when using a paper filter (Method 1) to ensure even saturation.
  • Stirring is not recommended for Method 2 (Classic) as it can agitate the grounds and potentially clog the felt filter. If grounds clump up and resist getting wet in Method 1, stirring is acceptable.

Troubleshooting Clogging:

  • Ensure coffee is coarsely ground and water is poured gently to minimize disruption of grounds.
  • If a filter clogs, gently poke the rounded blunt end of a dinner knife through the grounds until it hits the filter, then gently scrape the top of the filter. Avoid stirring.
  • Using Toddy Paper Filter Bags (Method 1) can help prevent felt filter clogging.

Maintenance Features:

Washing Before First Use:

  • Rinse the felt filter in running water.
  • Wash all other reusable parts in warm soapy water.

Easy Cleanup:

  1. Dispose: Discard grounds or tea leaves (and paper filter bag, if used in Method 1).
  2. Remove Filter: Remove the reusable felt filter from the bottom of the brewing container.
  3. Rinse Filter: Rinse the filter with water (no soap).
  4. Store Filter: Immediately place the damp filter in a resealable plastic bag and store it in the freezer.

General Cleaning:

  • All reusable parts are dishwasher safe.
  • For the longest life, hand-washing all reusable parts is recommended.

Filter Lifespan:

  • Reusable felt filters can be used up to 10 times (discard after 3 months).
  • Paper Filter Bags are for one-time use only.

Protecting the System for Long-Term Use:

  • When removing the filter, push a round, thin object through the bottom of the brewing container. Avoid using sharp objects to prevent leakage.
  • Keep the brewing container away from extreme temperatures.
  • Do not push the stopper in too hard to prevent cracking and leakage; a gentle press and a quarter turn are sufficient for sealing.
