This document is an installation manual for True Manufacturing Co., Inc.'s traditional reach-in commercial refrigerators and freezers. It provides comprehensive instructions for installation, operation, and maintenance to ensure efficient and trouble-free service.

Function Description

True commercial refrigerators and freezers are designed to provide reliable cold storage for commercial settings. These units are built with high-quality materials and strict quality controls to ensure long-term, trouble-free operation. They are rated for open food storage and are suitable for indoor use in environments with ambient temperatures not less than 60°F (15.5°C). The units are not suitable for outdoor use or areas where pressure washers or hoses may be used.

The core function of these appliances is to maintain specific internal temperatures for food preservation. This is achieved through a refrigeration system that includes a compressor, evaporator coil, and temperature controls. Depending on the model, units may feature either mechanical or electronic temperature controls with digital displays. Some models also include a "Flex Control" feature, allowing the cabinet to switch between cooler and freezer temperature settings.

Interior lighting is provided, particularly on glass door models, with light switches located either on the top panel (for electronic controls) or inside the top ceiling (for glass door models with mechanical controls).

Usage Features

The manual emphasizes proper installation as critical for optimal performance and warranty validity. Key usage features and considerations include:

  • Leveling: The cabinet must be leveled front-to-back and side-to-side to ensure effective condensate removal and proper door operation. This can be achieved using standard leveling legs or optional 6" leveling legs/castors. For non-mobile units, sealing the cabinet to the floor with NSF-approved sealant is recommended to prevent water intrusion and maintain hygiene.
  • Electrical Connection: Units are designed for specific NEMA plug configurations (115V or 230V) and require a dedicated electrical circuit. The use of adapter plugs or extension cords is strictly prohibited and will void the warranty. International models may require specific power cord installation.
  • Shelf Installation: Shelving is adjustable to accommodate various customer applications. Shelf clips hook into shelf standards, and shelves are placed on these clips. TrueTrac organizers, if included, come with retainer clips for installation. Proper installation of shelves ensures stability and prevents instability.
  • Temperature Control: The temperature control system, whether mechanical or electronic, regulates the internal temperature. Electronic controls often feature a digital display and can also function as a light switch. It's important to note that the control senses evaporator coil or air temperature, not product temperature directly. The most accurate way to verify operation is to check product temperature.
  • Defrost Cycles: All cabinets require defrost events to prevent frost and ice buildup on the evaporator coil. Refrigerators with mechanical controls defrost during compressor off-cycles, while freezers with mechanical controls defrost by time initiation. Electronic controls display "def" during defrost. Some models (TFM, TDC, THDC, TMW) require manual defrost.
  • Slide Door Operation: For models with slide doors, the manual provides detailed instructions for removal and adjustment. The hold-open feature allows doors to remain in an open position for convenience.

Maintenance Features

Regular maintenance is crucial for the longevity and efficient operation of True units. The manual outlines several key maintenance procedures:

  • Condenser Coil Cleaning: This is a critical maintenance task that should be performed every 30 days or as needed. Dirt accumulation on the condenser coil can lead to non-warranted repairs and cabinet failure. Cleaning involves removing the front louvered grill, using a stiff brush to clean the coil fins, and vacuuming or blowing compressed air/CO2 through the coil. Eye protection and gloves are recommended due to sharp coil fins.
  • Stainless Steel Care & Cleaning: Stainless steel surfaces require specific care to prevent corrosion. The manual advises against using steel wool, abrasive, or chlorine-based products. Instead, it recommends using soft cloths or sponges with white vinegar, ammonia, commercial detergents (non-chloride), or stainless steel polishes for routine cleaning. Degreasers are effective for removing grease and food residues. It's important to clean along polishing lines and rinse thoroughly after using chlorinated cleaners. Hydrochloric acid should never be used on stainless steel.
  • Water Treatment: Softening hard water and using appropriate filters can help reduce deposits and prevent corrosive elements from affecting the stainless steel.
  • Regular Restoration & Passivation: Stainless steel's protective chromium oxide layer can be compromised by scouring or harmful chemicals. Regular restoration and passivation processes help re-form this layer, preventing rust.
  • Component Replacement: The manual stresses that all servicing and component replacement should be performed by a qualified, licensed service provider using OEM parts to minimize risks and ensure proper function. Before any repairs, the unit must be unplugged.

The manual also includes important warnings regarding child entrapment during disposal and the proper disposal of the cabinet, emphasizing the removal of doors and leaving shelves in place.
