This document serves as an installation and operation manual for True Food Service Equipment's undercounter and worktop freezers, designed to provide years of trouble-free commercial refrigeration. It emphasizes proper installation, maintenance, and safe operation to ensure optimal performance and longevity of the unit.

Function Description

These True undercounter and worktop freezers are commercial refrigeration units designed to maintain specific temperatures for food storage. They are available in various models, including those with solid doors and glass doors, and can be configured with either mechanical or electronic temperature controls. The primary function is to cool and preserve food products, with freezer models capable of reaching temperatures around -10°F (-23°C) and refrigerator models around 35°F (1.7°C). The units feature a compressor-driven refrigeration system, evaporator fans, and, in freezer applications, defrost heaters to prevent frost buildup on the evaporator coil. Some models also incorporate a reversing condenser fan motor for self-cleaning of the condensing coil.

Usage Features

The freezers are designed for ease of use and efficient operation in a commercial kitchen environment.

  • Installation and Setup: The manual provides detailed instructions for uncrating the unit, which involves removing outer packaging and carefully lifting the cabinet off its wooden skid. It highlights the importance of proper electrical connection, emphasizing the use of a dedicated electrical circuit with a voltage rating matching the unit's data plate. The manual strictly warns against using extension cords or adapter plugs due to potential safety hazards and warranty voidance. Maintenance Features

  • Condenser Coil Cleaning: This is highlighted as a critical maintenance task, recommended every 30 days or as needed. Dirty condensers can lead to compressor failure, product loss, and increased electrical costs, none of which are covered by warranty. The cleaning process involves disconnecting power, removing the louvered grill, sliding out the compressor assembly, and cleaning accumulated dirt from the finned condenser coil with a stiff bristle brush, vacuum, or compressed air. Eye protection is strongly recommended when using compressed air. After cleaning, the compressor assembly and grill must be reinstalled, and power reconnected.
  • Stainless Steel Care: The manual provides detailed instructions for maintaining the stainless steel surfaces of the unit. It warns against using steel wool, abrasive materials, or chlorine-based products, which can damage the passive layer and lead to corrosion. Key recommendations include:
    • Using non-abrasive cleaning tools and soft cloths.
    • Cleaning along the polish lines or "grain" of the stainless steel.
    • Using alkaline, alkaline chlorinated, or non-chloride containing cleaners.
    • Treating hard water to reduce deposits.

    • Rinsing and wiping dry immediately after using chlorinated cleaners, allowing the stainless steel to air dry to help maintain the passivity film.
    • Strictly avoiding hydrochloric acid (muriatic acid).
    • Regularly restoring/passivating stainless steel.
  • Warranty Information: The manual outlines the three-year parts and labor warranty and an additional two-year compressor warranty, applicable to units shipped after July 1, 2014. It specifies what is covered and, importantly, what is not covered, such as standard wear parts (door gaskets, bulbs), issues from improper installation or lack of basic preventative maintenance (like condenser coil cleaning), consequential damages, economic losses, and damages from improper usage, alteration, neglect, abuse, or incorrect electrical connections.
