S’il y a de grosses bulles à la surface après
avoir fouetté, tapoter légèrement l’exté-
rieur du récipient pour les éliminer.
S’il y a encore des bulles, écumer le dessus
de quelques millimètres avec une cuillère.
Retirer la lance vapeur et faire pivoter le ré-
cipient pour donner à la mousse de lait un
éclat brillant.
Le lait est prêt à être servi.
Ne pas tarder à servir, sinon l’émulsion per-
dra de sa densité.
À la fin, purger la lance vapeur pour éliminer
les résidus de lait et la nettoyer soigneuse-
ment avec un chiffon imbibé d’eau chaude.

ÉMULSION DU LAIT
1 Commencer par verser doucement le lait
chauffé au centre de la tasse à café en
vous assurant que la crème au café reste
intacte.

If there are large bubbles on the surface af-
ter whipping, knock gently on the outside
of the bowl to remove them.
If there are still some bubbles, skim the top
a couple of millimetres with a spoon.
Remove the steam wand and swirl the con-
tainer to give the whipped milk a glossy
shine.
The milk is ready to be served.
Do not delay the service or the mounting
will lose its density.
When finished, purge the steam wand to re-
move milk residues and clean it thoroughly
with a cloth moistened with hot water.

1 Start by gently pouring the heated milk
into the centre of the coffee cup, ensuring
that the coffee cream remains intact

MONTATURA DEL LATTE
1 Iniziare versando delicatamente il latte
riscaldato al centro della tazza di caffè
assicurandosi che la crema del caffè
rimanga intatta.
