The BIRD system operates through a multi-stage process: pod preparation, grinding and dosing, agitation and steeping, and finally, vacuum filtering.
Pod Preparation: The brewing process begins by preparing the brew pod. This involves inserting a stainless steel filter into the pod. An optional paper filter can also be used for additional filtration, though it's advised not to pre-wet it. The "Gizmo" is then used to carefully push the assembled brew pod to the bottom of the glass vessel, ensuring it is securely seated.
Grind & Dose: After the pod is in place, 20-35g of fresh coffee is ground and dosed into the brewer. The recommended grind size is around moka-pot fineness, which is slightly finer than a standard filter grind, though this can be adjusted based on the specific recipe. Preheated brewing water is then added on top of the coffee grounds. The suggested water volume ranges from 250-400mL, with 300mL recommended as a starting point. The brewing temperature can vary from 80°C to 100°C, with 87°C suggested for initial use.
Agitate & Wait: Once the water and coffee are combined, the "Gizmo" is used to agitate the coffee and water evenly. This ensures thorough saturation and extraction. The mixture is then allowed to steep for a desired amount of time. For heated brews, a steeping time of 1-10 minutes is recommended, with 5 minutes suggested as a starting point. During agitation, the nut on the Gizmo should be in a specific position. When ready to raise the pod, the Wingnut is grasped, lifted slightly, and then put back.
Vacuum Filter: This is the core of the BIRD's unique brewing method. After the steeping time is complete, the Wingnut is rotated clockwise. This action raises the Drive Shaft, which in turn pulls up the brew pod. As the pod is lifted, it creates a vacuum beneath it, effectively separating the coffee grounds from the brewed coffee. This vacuum filtration ensures a clean, sediment-free cup. The manual emphasizes a "slow pull finishing with a dry puck," noting that this process can take 60 seconds or more of slow, evenly paced twisting of the Wingnut for optimal results. Once the vacuum breaks, the Drive Shaft is grasped and pulled out.
