Function Description

The primary function of the Welbilt ABM600 is to automate the bread-making process. It handles all stages, including kneading, rising, and baking, within a single inner pot. The device is controlled by a microcomputer, allowing for precise management of each cycle. Users can choose between a "Full Auto Cycle" for complete bread making or a "Manual Cycle" specifically for kneading dough.

In the Full Auto Cycle, the Bread Oven takes approximately 2 hours and 15 minutes to produce a loaf of bread. This cycle is ideal for users who want a hands-off approach to baking. It begins with the addition of ingredients, followed by the kneading, rising, and baking phases. Once baking is complete, the oven automatically enters a 1-hour cool-down cycle. However, it is recommended to remove the bread immediately after baking to prevent it from becoming soggy. The oven also features a "SELECT" pad to choose the desired crust color: Medium, Dark, or Light, catering to individual preferences for bread "doneness." For special kinds of bread, like raisin bread or nut bread, ingredients such as raisins and nuts should be added 25 minutes after pressing the "START" pad, when the Bread Oven beeps 10 times.

The Manual Cycle, on the other hand, is designed exclusively for kneading dough. This cycle is perfect for users who prefer to hand-shape and bake their creations in a conventional oven. It can be used to prepare dough for various items such as pizza, dinner rolls, or croissants. The kneading process in the Manual Cycle takes approximately 50 minutes. Similar to the auto cycle, the oven will beep 10 times after 25 minutes to indicate the best time to add additional ingredients like raisins. The completion of the dough kneading is signaled by 5 beeps. Users can mute the beep sound by pressing and holding the "CLEAR" pad for more than one second.

Usage Features

Operating the Welbilt ABM600 is straightforward. To begin, the inner pot must be correctly positioned in the main unit by aligning the arrow on its rim with the front and turning it clockwise until it locks. The dough blade is then placed onto the shaft inside the pot.

For the Full Auto Cycle, users first add active dry yeast (not fast or rapid rising yeast) near the edge of the inner pot, followed by other ingredients, ensuring all are at room temperature. A small quantity of warm water (approximately 85°F) is then added. After selecting the desired crust color (Medium, Light, or Dark) using the "SELECT" pad, the "START" button is pressed to begin the process.

For the Manual Cycle, the procedure is similar: add active dry yeast and other ingredients, then warm water. Select the "MANUAL" cycle using the "SELECT" pad, and press "START." Once the dough is ready, it can be removed from the inner pot for further preparation.

Removing the baked bread involves turning the inner pot counterclockwise to unlock it from the main unit, then carefully turning it upside down to release the bread. A plastic or non-metallic utensil should be used to remove the dough blade, which may be embedded in the bottom of the bread. It is crucial to allow the bread to cool to room temperature before slicing and serving.

Safety is emphasized throughout the usage instructions. The Bread Oven becomes extremely hot during and after baking, so oven mitts or pot holders should always be used when handling the inner pot and dough blade. Flammable objects should never be placed on top of the unit. The appliance should not be immersed in water, and the air intake opening at the bottom should not be obstructed. Inner Pot and Dough Blade: These parts are fluorine resin-coated, so they should be cleaned thoroughly with a sponge or soft cloth dampened in hot water. After cleaning, they must be dried completely and stored inside the main unit. To prevent scratching or damage to the coating, hard utensils like metal spoons or knives should not be used.

Shaft: After each use, all crumbs should be removed from the shaft. A damp sponge or cloth can be used. Baked-on dough should be softened with a damp cloth before wiping it away, avoiding sharp implements.

Seal: If crumbs accumulate on the bottom of the main unit, the seal should be removed and cleaned thoroughly with a sponge or soft cloth. It is important to reinstall the seal properly to prevent water leakage.

Main Unit: Before cleaning, the power cord must be unplugged from the AC outlet. The exterior of the main unit should be gently wiped with a damp sponge or soft cloth, followed by a dry cloth. Thinner, benzine, chemical cleaners, polishing powders, nylon, metal brushes, non-kitchen detergents, bleach cleansers, or oven cleaner should never be used. The main unit should not be immersed in water to prevent electrical shock or malfunctions.

Oven Interior: Flour, bread crumbs, and any other foreign matter should be removed from the inside of the oven. A clean cloth dampened in hot water and mild dishwashing liquid can be used for cleaning. It is crucial never to pour water directly into the oven. Accumulation of flour or other substances on the heater may cause smoke during baking.
