Overview

This document is the owner's manual for Wells Bloomfield Built-In Four-Well Modular Auto-Fill Warmers, specifically models MOD400TDM/AF and MOD427TDM/AF.

Function Description:

These appliances are commercial cooking equipment designed to hold pre-heated food for human consumption. They are built-in, four-well modular warmers with an auto-fill feature, intended for wet operation. The auto-fill function automatically feeds water into the "master" pan when its thermostat is turned ON, with the water level sensed by a probe. Manifolded auto-fill units have individual drain fittings connected to a single drain valve for the entire manifold, allowing water to seek the same level across all sections. The warmers are thermostatically controlled, applying power to the heating element based on the control knob position and the temperature sensed by a thermobulb. An indicator light glows when the thermostat calls for heat.

Important Technical Specifications:

The manual provides electrical specifications for both models:

  • MOD400TDM/AF & MOD427TDM/AF:
    • 208 VAC: 4960W, 14.5A (L1), 14.5A (L2), 9.8A (L3), 0.0A (N) for 3-phase; 23.8A for single-phase.
    • 240 VAC: 6600W, 17.8A (L1), 17.8A (L2), 11.3A (L3), 0.0A (N) for 3-phase; 27.5A for single-phase. The appliance is made in the USA and conforms to NSF Standard 4 for sanitation when installed according to instructions. UL Listed warmers are listed under UL File E6070.

Usage Features:

  • Temperature Control: The desired temperature is set by rotating the TEMPERATURE CONTROL KNOB, which has a numeric scale. Higher numbers correspond to higher temperatures. The knob rotates approximately 300° with an OFF position marked.
  • Auto-Fill System: Water level is sensed by a WATER LEVEL PROBE in the "master" pan (typically the far left pan for manifolded units). Water fills through an inlet tube. The auto-fill function activates only when the thermostat for the pan with the water level sensor is ON.
  • Drainage: Manifolded warmers have a single drain valve. All sections will share the same water level.
  • Pre-heating: Place desired pan(s) or inset(s) with appropriate adapter top on the warmer. Turn temperature control to HI for approximately 30 minutes, then set to the desired temperature. Keep the warmer covered during preheat and operation.
  • Operation Guidelines:
    • Always use an inset; do not place food directly into the warmer.
    • Always pour hot water into the warmer before preheating. Do not pour water into a dry, heated warmer.
    • Do not put ice into a warmer pan, as this causes condensation not covered by warranty.
    • Stir thick food items frequently and keep insets covered to maintain food quality.
    • Do not use auto-fill warmers in the dry mode, as this may damage the water level sensor probe.
    • Do not turn the thermostat ON for the pan with the probe and fill tube unless the entire warmer unit is to be used in the wet mode.
    • Check water level frequently during wet operation to prevent running dry, which can damage the warmer.
    • Alternating between wet and dry operation in any individual warmer is not recommended.
    • Do not use metal tools, steel wool, or caustic/abrasive cleansers to clean warmer pans.

Maintenance Features:

  • Daily Cleaning:
    • Turn control knob(s) to OFF and allow the warmer to cool.
    • Remove insets, pans, and adapter tops. Drain water if used for wet operation.
    • Wipe the entire unit with a clean cloth/sponge and mild detergent, carefully wiping debris and residue from the water level sensor.
    • Use a plastic scouring pad for hardened food particles or mineral deposits (do not use steel wool).
    • Rinse thoroughly with a vinegar and water solution to neutralize detergent residue.
    • Inspect the warmer flange-to-counter seal and reseal with food-grade silicone sealant if necessary to prevent leaks into insulation and heating elements.
    • Inspect the warmer tank for damage.
    • Close the drain valve, add warm water, and check for proper operation.
  • Weekly Cleaning (Deliming):
    • Remove insets, pans, and adapter tops. Drain water if used for wet operation.
    • Add water to pans until it's at the normal operating level (1" - 1 1/2" deep) or covers accumulated scale.
    • Heat water to maximum temperature (190°F or higher).
    • Pour commercial delime cleaner into each warmer pan, stir to dissolve, and turn heat control OFF. Cover pans.
    • Allow the solution to soak for at least one hour (or overnight for heavy scale buildup).
    • Drain hot water, scrub with a plastic scouring pad, rinse thoroughly with hot water, then dry.
    • Refill pans with hot tap water and resume operation. Heavy scale buildup may require additional treatments.
  • Stainless Steel Care:
    • Clean external components with a non-abrasive cleanser and soft cloth, rubbing in the direction of the grain.
    • Restore luster with stainless steel polish, rubbing in the direction of the grain.
    • Never use metal implements, wire brushes, abrasive scratch pads, or steel wool.
    • Keep warmer pans clean and free from calcium buildup. Use alkaline, alkaline chlorinated, or non-chloride cleansers. Use citric acid-based cleaners for calcium deposits.
    • Poor water quality (hard water) and contact with chlorides can lead to rusting, corrosion, and pitting.

Installation Notes:

  • Installation and start-up must be performed by an authorized installation company.
  • The installer is responsible for verifying compliance with specifications, local codes, and ordinances.
  • Water supply and drain installation must meet all applicable plumbing codes.
  • Auto-fill supply must be connected to a COLD WATER line only.
  • Electrical connections must be made in accordance with electrical code requirements and wiring diagrams. Wiring to the wrong voltage can severely damage the unit.
  • The warmer and control unit must be connected to an appropriate building ground.
  • For top-mounted warmers, sealants must be applied to the underside of the top flange, Wellsloks turned out to lock the warmer, and a thin bead of food-grade silicone sealant applied around the flange.
  • Wellslok Extension Kits are available for thicker countertops.
  • Cutout dimensions vary for auto-fill/non-auto-fill control panels, single/split control panels, and wood/metal counters. Verify dimensions before making the cutout.
