Overview

The Winterhalter Gastronom utensil washers GS 640, GS 650, and GS 660 are industrial machines designed for washing items and utensils in catering, butcher shops, and bakeries. These operating instructions must always be kept within easy reach of the utensil washer.

Function Description:

The utensil washer operates with fully automatic programs consisting of washing, dripping off, and rinsing. After being switched on, the machine fills and heats its boiler and tank to operating temperatures (tank: approx. 60°C, boiler: approx. 85°C). Once these temperatures are reached, the program button (6) lights green, indicating readiness for operation.

During the washing phase, a circulating pump conveys wash water from the tank through wash arms and nozzles onto the items. The wash arms move side to side to ensure powerful and efficient cleaning. The wash water is continuously circulated through a filtering system and a patented Mediamat Cyclo (floating particle separator). A short pause follows washing, allowing wash water to drip off the items. The final step is rinsing with fresh, hot water to remove residual water and warm the items for optimal drying. This rinse water also refreshes the wash water in the tank.

The machine supports various wash programs:

  • Normal programme (6): For normally soiled items, offering a medium drying time.
  • Short programme (10): For lightly soiled items, providing short or no drying time.
  • Intensive programme (13): For heavily soiled items, with a long drying time.
  • Normal programme with cold water pre-rinse (optional) (12): Designed for items with protein-containing soiling, where cold water rinsing prevents coagulation.
  • Tank drainage / self-cleaning (2): An automatic cleaning program where the wash pump activates for 30 seconds to clean the wash tank. Soiled wash water is pumped off, and the interior is rinsed with fresh water. The machine switches off automatically after this program.

Important Technical Specifications:

  • Water Temperatures: Tank approx. 60°C, Boiler approx. 85°C.
  • Detergent Dosing: Can be manual (powder) or automatic (liquid) via a built-in or external dosing pump. For GS 660, detergent and rinse additive containers can be stored inside the machine; for other models, they are stored separately.
  • Water Hardness: Greater quantities of detergent may be needed for heavily soiled items or extreme water hardness.
  • Hoseproof Rating: IP X5 (hoseproof), but high-pressure or steam jet cleaners are prohibited for external cleaning.
  • Noise Emission: Workplace related emission value measured according to DIN EN ISO 11202: LpAeq < 70dB.
  • Tank Volume: GS 640, GS 650: 85 liters; GS 660: 125 liters.
  • Detergent Dosage (Winterhalter Gastronom Detergent P 65):
    • GS 640, GS 650: 255g (1 measuring cup) for initial dosage; 75g (1/2 measuring cup) for manual addition after approx. 5 wash cycles.
    • GS 660: 375g (1 1/2 measuring cups) for initial dosage; 110g (3/4 measuring cup) for manual addition after approx. 5 wash cycles.
    • For normal program with cold water pre-rinse:
      • GS 640, GS 650: 110g (3/4 measuring cup) for approx. 5 l/basket fresh water rinsing.
      • GS 660: 165g (1 measuring cup) for approx. 7.5 l/basket fresh water rinsing.

Usage Features:

  • Operating Panel: Located on the bottom casing, featuring an On/Off switch (1), Tank drainage / Self cleaning button (2), Control lamp for fault (3), Control lamp for lack of detergent or rinse additive (4), Control lamp for connected water treatment (5), Programme button normal programme (6), Temperature display for Boiler (7) and Tank (8), button to Activate special programmes (9), Short programme button (10), Reduced temperature rinse button (12), Intensive programme button (13), and a Button area for special programmes (14).
  • Before Washing:
    • Turn water stop valve to open.
    • Switch on customer's main switch.
    • Check and refill rinse additive and detergent containers (if automatic dosing).
    • Observe safety instructions on packaging.
    • Ensure flat filters, basket filter, and drainage filter are installed.
    • Do not load items at this stage; close the door.
    • Press On/Off switch (1). The program button (6) lights red during heating and green when ready.
    • Keep the door closed during filling/heating.
    • Open door to load items.
    • For manual detergent dosing, pour powder into the basket filter with a cup.
    • Close door and press program button (6) to start.
  • Loading Items: Scrape off large leftovers. Place items with openings facing downwards. Avoid stacking to prevent spray shadows. Baking sheets should be inserted with a forward slant, soiled sides down. Use a plastic small parts basket for cutlery and small items, mounting it on the utensil basket. Place knives and sharp objects upright in the cutlery basket or lay them in the wash basket. Use a plastic basket to secure light plastic parts.
  • Changing Programs:
    • To switch between special programs (short, intensive, or reduced temperature rinse), first activate the special programs area by pressing the '+' function button (9). This displays tank and boiler temperatures. Then select the desired program button.
    • To return to the normal program, press the '+' function button (9) again. The special program area lights will turn off.
  • Error Alarms:
    • If a fault symbol lights up, switch off the machine (On/Off switch). An "Err" sign with a fault code will appear.
    • Program key (6) lights red if temperature is below setpoint (continuous light during initial heating) or flashes if temperature is greater than 95°C (danger of scalding).
    • "ECO" display indicates peak load cut-off active.
    • "DOS" display indicates lack of detergent or rinse additive.
    • Fault in online water treatment plant is indicated by the relevant symbol.

Maintenance Features:

  • After Washing:
    • Remove wash items and push the wash basket back into the machine. Close the door.
    • Hold down the tank drainage / self-cleaning button (2) for 2 seconds. The button will flash during cleaning.
    • Open the door after the program finishes.
    • Remove and clean the basket filter and flat filter.
    • Check the interior for cleanliness; remove dirt with a brush. Do not use steel sponges.
    • Re-insert cleaned parts.
    • Leave the door open to allow the interior to dry, preventing corrosion.
    • Clean outer walls with special stainless steel cleaning products (Winterhalter Gastronom high grade stainless steel cleaner and protection recommended).
    • Turn water stop valve to closed position.
    • Switch off customer's main switch.
  • Regular Maintenance:
    • Check basket filter for blockages and clean if necessary.
    • Check tank water for soiling; drain and refill if necessary.
    • During wash pauses, keep the door closed to avoid heat loss.
    • Remove wash arms and check jets for blockages; clean if necessary.
    • Remove drainage filter, check for blockages and clean if necessary.
    • Free machine interior from remains with a brush.
    • Clean the supply filter after the water stop valve.
    • Winterhalter recommends servicing the utensil washer at least twice a year by a customer service engineer.
  • Descaling:
    • Drain the machine.
    • Interrupt detergent supply by removing the suction pipe from the detergent canister.
    • Refill the machine.
    • Add descaling solution according to manufacturer's instructions.
    • Observe printed safety instructions.
    • Trigger the intensive program once or twice (max. 10 minutes circulation) to loosen scale.
    • Drain the machine.
    • Never leave descaling solution in the machine for several hours.
    • Put detergent supply into operation again.
    • Refill the machine.
    • Operate the machine twice more in the intensive program.
    • Drain the machine or use for the current wash program.
  • Changing Detergent Type (Liquid Product):
    • Rinse suction and pressure hoses with fresh water before connecting a new detergent container.
    • Remove the suction stick from the empty container and place it in fresh water.
    • Trigger several wash programs until fresh water is visibly pumped through the dosing pump.
    • Insert the suction stick into the new detergent container and operate as usual. Failure to follow this can lead to crystallisation and damage to the dosing pump, voiding the guarantee.
