Chop Suey
Serves 2
100 g fillet of pork
100 g fillet of turkey
1-2 tbsp each of sherry and Soya sauce
½ tbsp cornflour
a little sugar
½ Chinese mushroom, soaked in lukewarm water
½ leek, sliced into thin rings
1 small carrot, cut into julienne strips
150 g tinned bamboo shoots, cut into julienne strips
10 g soaked glass noodles
2 tbsp safflower oil
60 g mixed sprouted vegetables (e.g. lentil, Soya bean and pea sprouts)
Cut the meat into thin strips. Make a marinade with the sherry, Soya sauce,
cornflour and a pinch of sugar and marinate the meat for about 1 hour.
Prepare the glass noodles as instructed on the packet and cut into short lengths.
Sauté the vegetables, bean sprouts and mushrooms quickly in portions in the wok
for about 2 min. each. Allow the meat to drain and stir fry in 2 portions for 3 min.
each.
Mix all the ingredients well together and heat up briefly once more.
Season to taste.
