Function Description:

The Café gas range is a self-cleaning double oven appliance designed for cooking and baking. It features multiple surface burners, a griddle (on some models), and two independent ovens (upper and lower) with various cooking modes. The self-cleaning function operates at high temperatures to burn away food soils, while a Steam Clean mode offers a lower-temperature cleaning option for light soil. The range also includes smart connectivity features, allowing remote control and monitoring via a smartphone or tablet.

Important Technical Specifications:

  • Power Supply: 120-volt grounded outlet.
  • Gas Type: Shipped for natural gas, convertible to propane gas by a qualified technician.

Usage Features:

  • Surface Burners:
    • Ignition: Push and turn knob to LITE position. All burners spark when one is turned to LITE.
    • Automatic Reignition: Burners automatically relight if flame goes out.
    • Flame Size: Adjustable, should match cookware size.
    • Cookware: Recommendations for aluminum, stainless steel, cast-iron, enamelware, glass, and heatproof glass ceramic. Flat-bottomed woks (14 inches or less) are recommended. Aftermarket stovetop grills and wok support rings are not recommended due to carbon monoxide hazards.
  • Griddle:
    • Positioning: Replaces the center grate.
    • Preheating: Set center burners to 4 (non-reversible) or Hi (reversible) for 5-10 minutes.
    • Cook Settings: Table provided for various foods (e.g., bacon, eggs, pancakes) with recommended settings (1-4, Lo, Med, Hi).
  • Oven Controls:
    • Upper Oven and Lower Oven selection.
    • Cooking Modes: Convection Bake, Convection Roast, Bake, Broil (Hi/Lo), Warm, Proof, Frozen Snacks (Single/Multi), Frozen Pizza (Single/Multi), Baked Goods.

    • Oven Probe: Monitors internal food temperature and turns off the oven when programmed temperature is reached (Bake, Convection Bake, Convection Roast only, lower oven only).
    • Auto Recipe Conversion: Automatically converts regular baking temperatures to convection bake temperatures.
    • Sabbath Mode: Special mode for continuous or timed baking, disabling tones and oven lights.
    • Remote Enable: Allows remote control of oven operations via smartphone app.
    • Bluetooth® - Chef Connect: Pairing feature for compatible appliances (e.g., microwave, range hood, precision cooking probe).
  • Oven Racks: Flat racks and extension racks (on some models). Instructions for removal, replacement, and lubrication.

Maintenance Features:

  • General Cleaning: Mild soap and water or vinegar and water solution for painted surfaces, control panel, and oven exterior.
  • Stainless Steel: Warm sudsy water or stainless steel cleaner/polish, wipe in the direction of the grain. Avoid steel wool.
  • Oven Interior:
    • Manual Cleaning: Soft cloth with mild soap and water or vinegar and water solution. Gentle abrasive (e.g., Bar Keepers Friend®) for stubborn soils on enameled surfaces. Avoid abrasive cleaners on door glass.
    • Steam Clean Mode: Uses water and lower temperatures for light soil.
    • Self Clean Mode: High temperatures for heavy soil. Remove all items except porcelain-coated oven racks. Wipe excess grease before starting.
  • Cooktop Cleaning:
    • Burner Caps: Hot, soapy water; plastic scouring pad for burned-on food; dishwasher safe for round caps.
    • Burner Heads: Hot, soapy water; plastic bristles for stubborn stains. Avoid steel wool or scouring pads. Ensure ports are clean.
    • Grates: Hot, soapy water; plastic scouring pad for burned-on food. Can be self-cleaned in the oven if they do not have rubber bumpers.
    • Griddle: Stiff brush and hot water. Avoid soap/harsh detergents to preserve seasoning. Re-season with cooking oil.
  • Oven Light Replacement: Disconnect power, allow bulb to cool, turn glass cover counterclockwise 1/4 turn, replace with 40-watt appliance bulb.
