Ingredients
For the sponge:
2 eggs
100g/4 oz SR Flour
100g/4oz Caster sugar
100g/4oz Margarine
Few drops of vanilla essence
For the topping:
Any one of the following:
2 x tbs golden syrup
2 x tbs jam
4 x tbs of stewed fruits such as apricots,
apples, plums, rhubarb etc.
Directions
1. Prepare a 1 pint pudding basin by greasing well with butter.
2. Place your chosen topping into the bottom of the pudding basin.
3. Make the sponge by mixing all the ingredients together with an electric mixer until
light and uy.
4. Spoon the mixture into the pudding basin, should be approx. ¾ full, and cover rmly with
foil.
5. Put 300ml of boiling water into the cooking pot and place the sealed pudding basin into
the ceramic pot.
6. Put the Sear Cooking Pot into the base unit and put on the glass lid.
Slow cookers were made for cooking sponge puddings as this method creates a
light yet dense sponge that soaks up the flavour of the chosen topping e.g Syrup,
stewed fruit such as apricots or jam are all ideal.

Tips:
• Use a 1pint/500ml pudding basin and
grease it well to prevent the pudding
from sticking.
• Cover the pudding basin with foil
securely to prevent any water from
leaking into the pudding basin.
