Overview

The Cuisinart® Extra-Large Rotisserie Fryer and Steamer, model CDF-500, is a versatile kitchen appliance designed for household use, offering deep-frying, rotisserie frying, and steaming capabilities. This multi-functional unit allows users to prepare a wide variety of foods, from crispy fried dishes to perfectly steamed vegetables and even a whole rotisserie turkey. Its design prioritizes ease of use and safety, incorporating several features to ensure a reliable and enjoyable cooking experience.

Function Description

The primary function of this appliance is deep-frying, which involves submerging food in hot oil to cook it quickly and achieve a crispy exterior. It is capable of frying substantial quantities of food, making it suitable for family meals or entertaining guests. The unit requires approximately 5 liters of good-quality vegetable, corn, canola, soybean, or peanut oil with a smoke point of 420°F or higher. Users are cautioned against mixing different types of oils or using solid/hydrogenated oils, shortening, olive oil, or grapeseed oil, as these may have different smoke points and affect performance. The appliance features a temperature control knob that allows precise adjustment of the oil temperature, ensuring optimal cooking conditions for various recipes. A "Ready" indicator light illuminates when the desired temperature is reached, signaling that the unit is prepared for cooking.

Beyond traditional deep-frying, the CDF-500 excels in rotisserie frying, particularly for larger items like whole turkeys. This feature involves a spit rod and two cages (small and large) that secure the food, allowing it to rotate continuously in the hot oil. This rotation ensures even cooking and browning on all sides, resulting in a uniformly cooked and crispy product. The rotisserie mechanism is engaged via a toggle switch, and a double lifting handle is provided to safely lower and raise the assembled rotisserie spit into and out of the hot oil. This method is ideal for achieving professional-quality results with whole poultry.

The appliance also functions as a steamer, providing a healthy cooking alternative. To steam, users add approximately 8 cups of water to the oil reservoir, remove the rotisserie and basket, and bring the water to a boil. Once boiling, the temperature is reduced to 235°F for steaming. Food is placed in the mesh basket, which is then lowered into the unit over the water. This allows for the gentle cooking of lobsters, oysters, clams, vegetables, and other items, preserving their natural flavors and nutrients. The steaming function is a convenient way to prepare a variety of dishes without the need for additional kitchen equipment.

A timer control knob is integrated into the control panel, allowing users to set desired cooking durations. While the timer rings when the set time is complete, it's important to note that it does not automatically switch off the appliance. Users must manually turn the temperature control knob to "STANDBY" and unplug the unit to power it down after cooking.

Usage Features

The Cuisinart® Extra-Large Rotisserie Fryer and Steamer is designed for intuitive operation, with several features enhancing its usability. The control panel includes a temperature control knob, a timer control knob, a "Ready" indicator light, and a "Power On" indicator light, all clearly labeled for easy understanding. A toggle switch allows users to turn the rotisserie function on or off.

For deep-frying, food is typically placed in the mesh basket, which is then lowered into the hot oil. The basket handle is designed to facilitate safe handling, allowing users to raise and lower the basket and rest it on a hook to drain excess oil. When frying foods dipped in fresh batter, it's recommended to lower the empty basket first, then add food directly to the oil using tongs, and finally use the basket to lift the cooked food. For frozen foods, it's crucial to remove ice crystals and dry the food thoroughly to prevent splattering. Frozen foods should be added slowly to avoid a significant drop in oil temperature.

Rotisserie frying involves a specific setup process. After preparing the food (e.g., a thawed turkey with neck and giblets removed), the spit rod is attached to the large cage, and the turkey is guided onto the spit, secured by the tines of the large cage. The small cage is then attached to hold the turkey legs together. A double lifting handle is used to maneuver the assembled rotisserie spit into the unit, guiding it through an interior labyrinth to the lowest cooking position. The rotisserie toggle switch is then activated to begin rotation. During rotisserie cooking, it's essential to monitor the turkey's rotation to ensure it doesn't touch the sides of the oil container. Doneness for turkey is checked by inserting a thermometer into the thickest part of the thigh, aiming for 170°F (thigh) and 165°F (breast).

Steaming is straightforward: water is added, the unit is heated to a boil, and then the temperature is reduced. Food is placed in the mesh basket, which is lowered into the unit over the water. The lid is placed on top, and the food is steamed until desired doneness. Monitoring the water level is important to ensure the heating element remains covered.

The appliance features a vented lid with a handle, which helps to contain splatters and steam during cooking. It's recommended to keep the lid closed during frying, except when frying French fries and high-moisture foods, to minimize oil splattering and maintain temperature. The unit is designed for indoor, countertop use only and should be placed at least 4 inches away from walls and other objects during operation.

Maintenance Features

Maintaining the Cuisinart® Extra-Large Rotisserie Fryer and Steamer is crucial for its longevity and safe operation. Before any cleaning, the appliance must be unplugged, and the oil or water allowed to cool completely to room temperature. This cooling period can take approximately 2 hours for oil.

The cleaning process involves several steps. First, the lid and basket are removed. The control panel/heater assembly is lifted, allowing any remaining oil to drain into the oil container. The control panel itself should never be immersed in water or other liquids; its outer surface and the heating element can be wiped with a damp cloth containing mild soap solution or clean water.

Oil or water is drained from the unit using the spigot located on the bottom of the front housing. A drain hose can be attached to the spigot, which is turned counterclockwise to open and clockwise to close. After draining, the removable oil container can be lifted out. Used oil can be filtered through a sieve lined with cheesecloth to remove food particles, crumbs, and impurities, allowing for reuse. The oil can be reused multiple times, especially if primarily used for potatoes, but should be changed more frequently if used for protein-rich foods like poultry or fish. Filtered oil can be stored in a cool, dark, airtight container for up to a month, or longer if refrigerated or frozen, but should not be used for more than 6 months.

The lid and mesh basket are dishwasher safe, simplifying their cleaning. The stainless steel housing is not submersible and should be washed by hand with warm, soapy water. All parts must be thoroughly dried after washing and before reassembly or storage to prevent moisture-related issues. When reassembling, it's critical to ensure the heating element is properly seated, as the appliance will not operate otherwise due to a safety interlock feature.

The appliance incorporates several safety features that also contribute to its maintenance and safe handling. The "Safety Interlock" ensures the control panel/heating element is correctly positioned before the unit can operate. A "Breakaway Cord" is designed to quickly disconnect if a pulling force is applied, preventing accidental spills or damage. "Thermostat Overload Protection" automatically shuts off the unit if the temperature exceeds the recommended level, requiring the unit to cool down and be reset manually by unplugging and then plugging it back in. Additionally, a "450°F Cutoff" feature automatically turns off the unit if the oil temperature reaches over 450°F, requiring manual reset via a red button. These features not only enhance safety but also help protect the appliance from potential damage due to overheating or improper setup. Regular checks for loose screws or nuts and their retightening are also recommended as part of routine maintenance.
