Meat, poultry, sh Should be very cold but not frozen.
Mushrooms Choose rm, fresh mushrooms. Cut into
even pieces no larger than 1.5cm.
Nutmeg Pulse approximately 5 times to break
apart, and then run continuously.
Nuts Either operation can be used depending
on the desired consistency (see next

Olives Use pitted olives.
Onions, shallots
Peppers Cut into 1.5cm pieces.
Peppercorns
