Overview

This document serves as an operating manual for the Diamond AROMA/2EB espresso coffee machine, available in QUADRANT 2 and QUADRANT 3 models. It provides instructions for installation, operation, and maintenance in multiple languages, including English.

Function Description:

The Diamond AROMA/2EB espresso coffee machine is designed for commercial use, enabling the preparation of espresso coffee and other hot beverages. It features steam wands for frothing milk and heating liquids, and a hot water tap for dispensing hot water. Automatic models (CV models) offer volumetric control for programmed coffee doses, while semi-automatic models use switch buttons for manual control.

Important Technical Specifications:

  • Noise Emission: Weighted sound pressure level A - 83.6 dB, uncertainty 2 dB.
  • Water Supply: Requires a water tap with a G3/8 nut for the water supply tube. For water networks with pressure below 1 bar, an anti-reflux valve is recommended.
  • Drainage: Requires a drain pipe with a drain hose of minimum 16/17 mm diameter.
  • Electrical Connection: Requires an earthed electric mains supply with 30mA protection and a 20 A circuit breaker (20 A for 2-group machines, 25 A for 3-group machines). A 3 mm contact separation is required for the circuit breaker. Direct connection to an earthed mains supply is mandatory; multi-socket adapters or extension leads are not to be used. The machine has an equipotential terminal marked with the symbol on its underside.
  • Boiler Pressure (CV and Semi-Automatic Models): Should be approximately +/- 1 bar (+/- 0.1 MPa) when the orange indicator light turns off. This can be adjusted via the pressostat.
  • Boiler Temperature (DSP Models): Should be approximately ± 117°C when the orange indicator light turns off. This temperature is set in the Technical Programming (refer to DSP manual).
  • Pump Pressure: Should be approximately ± 9 bar (± 0.9 MPa) when the pump is active. When the pump is not running, the manometer (3) indicates the water network pressure. Pump pressure can be adjusted via the screw on the pump head.
  • Coffee Grinding: Ideal espresso extraction time is 18-25 seconds for a 30 ml coffee. Grinding should be adjusted to achieve this timing: coarser grind for extraction times over 25 seconds, finer grind for extraction times under 18 seconds.
  • Environmental Conditions: Ideal ambient temperature for operation is between 15°C and 25°C. The machine should not be switched off in areas where temperatures can drop below 0°C to prevent freezing.

Usage Features:

  • Keyboard (Automatic Models): Features six keys:
    • Key 1: Portion key for 1 espresso (+)
    • Key 2: Portion key for 1 double espresso (-)
    • Key 3: Portion key for 2 espresso (ENTER)
    • Key 4: Portion key for 2 double espresso
    • Key 5: Continuous production/Programmation (MENU)
    • Key 6: Portion key for hot water
  • Programming Doses (CV Models):
    1. Place coffee dose(s) in the portafilter and attach to the group.
    2. Press and hold Key 5 for 3 seconds until its LED blinks and all other coffee key LEDs light up, indicating programming mode.
    3. Within 5 seconds, press the desired coffee key (e.g., Key 1) to program. Its LED and Key 5's LED will light up; others will turn off.
    4. To stop extraction when the desired coffee quantity is reached, press any coffee key (1-4). The programmed key's LED will turn off; Key 5's LED will blink, and unprogrammed keys' LEDs will remain lit.
    5. Repeat for other coffee keys.
    • If no key is pressed within 5 seconds in programming mode, the machine exits programming mode (TIME-OUT). To re-enter, press and hold Key 5 for 3 seconds.
    • Programming on the leftmost group is automatically transferred to other groups, but independent programming for each group is possible.
  • Preparing Espresso:
    1. Fill portafilter with 6.5-7g of ground coffee for 1 espresso.
    2. Tamp coffee uniformly.
    3. Insert portafilter into the group and turn right to secure.
    4. Position cup(s) under the portafilter spout.
    5. For automatic models, press the desired coffee dose button. For semi-automatic models, press the switch button above the group.
    6. The machine automatically stops extraction for pre-programmed doses. For continuous production (Key 5 on automatic models or switch button on semi-automatic models), press again to stop.
  • Extracting Hot Water:
    • Turn the hot water control knob (13) to the right to dispense hot water, and to the left to close.
    • DSP Models: Key 6 activates hot water dispensing. The key remains lit during dispensing. Dispensing automatically stops after a pre-programmed time. To stop early, press any key on the active group's keyboard.
  • Extracting Steam:
    • Turn the steam control knob (1) to the right to dispense steam, and to the left to close.
    • The machine has 2 steam wands.
    • Before and after each use, open the steam wand for 2-3 seconds to clear residues.
    • Clean the steam wand with a wet cloth after each use.

Maintenance Features:

  • Safety Precautions:
    • Always disconnect the machine from the electrical supply before cleaning or maintenance.
    • Allow the machine to cool down before cleaning to avoid burns.
    • Do not use water jets to clean the machine. Do not pour water onto or into the machine or its components.
    • Liquids and steam are very hot; avoid contact with groups, metal parts of portafilters, and steam wands. Do not place face or hands above steam wands.
    • All maintenance and repair operations must be performed by qualified and authorized personnel.
    • Use only original spare parts.
  • Daily Cleaning:
    • Groups (Automatic Models - CV):
      1. Insert the blind filter into a portafilter.
      2. Attach the portafilter to the group to be cleaned.
      3. Simultaneously press Key 1 and Key 5 to start the cleaning program.
      4. LEDs of both active keys will blink during cleaning.
      5. When cleaning is complete, LEDs stop blinking, and the machine returns to normal operation.
      6. Remove the portafilter and blind filter, replace with a normal filter.
      • Run the group 2-3 times to rinse.
      • The cleaning program can be run on multiple groups simultaneously.
    • Groups (Semi-Automatic Models):
      1. Insert the blind filter into a portafilter.
      2. Attach the portafilter to the group to be cleaned.
      3. Press the switch button above the group to activate it for approx. 30 seconds.
      4. Press the switch button again to stop.
      5. Repeat until water from the group is clear and free of detergent.
      6. Remove the blind filter and replace with a normal filter.
  • Weekly Cleaning:
    • Groups (Automatic Models - CV):
      1. Insert the blind filter into a portafilter.
      2. Add approximately 5 ml of coffee machine detergent to the blind filter.
      3. Attach the portafilter to the group to be cleaned.
      4. Simultaneously press Key 1 and Key 5 to start the cleaning program.
      5. LEDs of both active keys will blink during cleaning.
      6. When cleaning is complete, LEDs stop blinking, and the machine returns to normal operation.
      7. Remove the portafilter and blind filter.
      • The cleaning program can be run on multiple groups simultaneously.
      • Prepare and discard a normal espresso after cleaning to eliminate any residual taste.
    • Groups (Semi-Automatic Models):
      1. Insert the blind filter into a portafilter.
      2. Add approximately 5 ml of coffee machine detergent to the blind filter.
      3. Attach the portafilter to the group to be cleaned.
      4. Press the switch button above the group to activate it for approx. 30 seconds.
      5. Press the switch button again to stop.
      6. Repeat until water from the group is clear and free of detergent.
      7. Remove the blind filter and replace with a normal filter.
      8. Run the group 2-4 times to rinse.
  • Filters and Portafilters: Rinse in hot water with specific detergent to dissolve greasy coffee deposits.
  • Machine Exterior: Clean with a damp cloth or sponge. Clean the guides and seals of the portafilters and groups. Carefully clean water taps and steam wands to prevent crust buildup. Do not use abrasive or corrosive cleaning agents.
  • Grids and Trays: Remove plastic grids from the upper tray and clean with a damp cloth. Remove the lower grid, tray, and protection panel. Rinse with water and appropriate detergent. Do not use abrasive detergents or solvents.
  • Waste Reservoir: After removing the lower tray and panel, clean the waste reservoir and drain hole with a brush to remove residues and prevent blockages.
  • Water Softener: Clean the water softener regularly, at least every two weeks, following the manufacturer's instructions.

Alarm Signals:

  • TIME-OUT during boiler filling:
    • CV Models: If the maximum water level sensor does not detect water, the machine automatically starts filling. If filling exceeds 120 seconds, it stops, and all keyboard LEDs blink as an alarm. To deactivate, turn the machine off and on. Check water level probes and water distribution block if the error persists.
    • Semi-Automatic Models: The red indicator light blinks during filling. If the maximum level is not reached within 180 seconds, filling stops, and the red indicator light stays on (not blinking) as an alarm. To deactivate, turn the machine off and on. Check probes and water inlet if the error persists.
  • TIME-OUT of volumetric counter (CV Models): If the volumetric counter does not receive any electronic impulses for 5 consecutive seconds during a programmed dose extraction (keys 1-4), the active key's LED blinks. If no impulses are received for 1 minute, beverage production automatically stops.
