THE WORKING PROCESS
6.1 - DESCRIPTION OF THE WORKING CYCLE
• Put the dough previously weighted, on the dough rounding plate, and then flatten the
dough with the hands in a way to perfectly fill the plate.
• Put the dough rounding plate on the aluminum plate, making sure that it is well fitted in
the aluminum plate’s pin (fig. 6.1).
