SEASONING CABINET
Thank you for choosing an Seasoning cabinet.
Seasoning cabinet has been developed to reproduce the necessary and optimal temperature and humidity conditions to mature
salamis, cheese or meat, regardless of outside weather conditions.
For example, the seasoning of salamis grants a certain product a specific time for rest in suitable climate conditions, so that it reaches
the best outcome in terms of organoleptic quality, aroma, crispness and taste within the less time as possible.
Products must be hanged on special supports located inside the Seasoning cabinet, in order to guarantee a proper air circulation
between them.
It is also advisable to set a seasoning cycle for products with the same size and type, to ensure the best result.
The Seasoning cycle can be divided into 3 main steps:
1) STEWING/DRIPPING
Just a few hours during which the diffusion of aroma inside the meat is facilitated, activating the natural fermentation process
2) DRYING
It takes about six days. During this phase, the product loses a huge quantity of water. This loss should be the most uniform possible,
alternating moments of work and rest, in order to keep the gut elastic and attract the water from the inside to the outside of the sa-
lami.
3) SEASONING
The duration of this phase depends on the type of product. The right regulation of humidity helps the proliferation of natural enzymatic
phenomena, “Good mould” which favours the complete maturation of the product, as to guarantee its preservation and healthiness.
Thanks to the electronic control panel, it is possible to customize and store 20 different programs divided into 6 phases each (from
F1 to F6).
It is possible to set the following values for each phase: temperature, relative humidity, duration and rest pauses.
Each phase can be cancelled according to the type of product and to the required program. For example, the Seasoning program
has all the six phases activated, each one set with specific parameters.
On the contrary, the Cave program has only one phase activated with an endless duration, since this program is a preservation cycle
and keeps constant temperature and humidity values.
In case of other products, the phases can be managed and activated differently.
