THREE-CHEESE SOUFFLÉ
Ingredients
• 4 eggs, separated
• 720 ml milk
• 125 g butter, melted
• 80 g grated parmesan cheese
• 60 g grated provolone cheese
• 1 grated mozarella cheese,
plus 1 cup of 1cm diced mozarella
• 360gplainour
• 3 teaspoons baking powder
• 1 teaspoon bi-carb soda
• 2 teaspoons sea salt
• 20gnelychoppedchives
Serve with crispy bacon and
baby rocket
Method
1. Select BELGIANwafesettinganddialupnumber5onthebrowningcontroldial.Preheat
untilorangelightashesupandthewordsHEATINGdisappear.
2. Combine egg yolks, milk and melted butter together and whisk until well combined.
3. Placecheeses,our,bakingpowderandbi-carbsodaandsaltintoalargebowl;makea
well in the centre.
4. Pour in egg and milk mixture and fold until just combined.
5. Beateggwhiteswithelectricbeatersuntilrmpeaksform.Foldthroughwafebatter
along with chopped chives.
6.Usingwafedosingcup,pour½cupofbatterintoeachwafesquare.Closelidandcook
untiltimerhasnishedandreadybeephassounded3times.Repeatwithremainingbatter.
7. Serve with crispy bacon and homemade baked beans and rocket.
