  If your Henny Penny Commercial Food Equipment is not holding temperature, ensure the doors are kept closed, avoid holding product for longer than recommended times, and increase the air temperature setpoint in Special Program Mode. Check the heaters and replace if bad. Check the blower and replace if bad. Replace the relay. Check the high limit and replace if bad. Compare receptacle voltage to data plate voltage. Replace bad door gaskets. Ohm out the probe and replace if necessary. This issue can arise from doors being left open, product held too long, control temperature set too low, a bad air heater, a blower not working, bad air heater or blower relays, a bad high limit, low or improper voltage, a torn or worn door gasket, or a faulty air probe.
