Carrot and Ginger Soup
Serves 4
1 brown onion, diced
1 clove garlic, minced
2cm piece ginger, minced
1½ tsp ground cumin
1 tsp ground turmeric
450g sweet potato, 2cm pieces
250g carrot, peeled, 2cm pieces
500ml vegetable stock
¼ cup sour cream, to serve
2 tbsp chives, finely sliced, to serve
1. Place the onion, garlic, ginger,
cumin, turmeric, sweet potato, carrot
and stock into the soup maker.
2. Place the motor body/lid on to the
soup maker.
3. Select the ‘SMOOTH’ soup setting
and then select the ‘START’ button.
4. Serve with a scoop of sour cream
and chives.
Tuscan White Bean Soup
Serves 4
2 tbsp olive oil
½ leek, thinly sliced
3 cloves garlic, minced
300g potato, 2cm pieces
2 x 425g can butter beans, drained
750ml chicken stock
1 sprig thyme, shredded
2 tsp lemon juice
2 chorizo sausages, diced, grilled, to serve
1. Place the oil, leek, garlic, potato,
beans, stock, thyme and lemon juice
into the soup maker.
2. Place the motor body/lid on to the
soup maker.
3. Select the ‘SMOOTH’ soup setting and
then select the ‘START’ button.
4. Evenly top each bowl of soup with
chorizo and serve.
