Strawberry Ice Cream
Ingredients Fresh strawberries, cut up 300g
Egg yolks 2
Caster sugar 70–85g
Skim milk 200mL
Double cream (or thickened) 200mL
Method
• In a blender jug, sprinkle a little of the sugar over the strawberries and mash
or puree them until smooth using a fork, potato masher or stick mixer.
• In a separate bowl, beat the egg yolks and the remaining caster sugar until
the mixture is creamy and light. Then add the cold milk and combine. Add
the cream to the egg mixture and stir until well combined.
• Add the pureed strawberries to the mixture and stir until well combined.
Cover the mixture with cling wrap and chill in the refrigerator for at least
4 hours.
• With the paddle rotating, pour the mixture through the chute into the inner
bowl of the ice cream maker. Leave the machine churning until the mixture
has reached the desired consistency. If all ingredients were well chilled, and
the bowl thoroughly frozen, this should not take more than 15 to 30 minutes.
Quick & Easy Strawberry Ice Cream (no eggs)
Ingredients Fresh strawberries, cut up 250g
Caster sugar 100g
Double cream (or thickened) 100mL
Juice from half a small lemon
Method
• In a blender jug, sprinkle a little of the sugar over the strawberries and mash
or puree them until smooth using a fork, potato masher or stick mixer.
• Pour the pureed strawberries into a separate bowl, add the remaining
ingredients and stir until combined. Cover the mixture with cling wrap and
chill in the refrigerator for at least 4 hours.
• With the paddle rotating, pour the mixture through the chute into the inner
bowl of the ice cream maker. Leave the machine churning until the mixture
has reached the desired consistency. If all ingredients were well chilled, and
the bowl thoroughly frozen, this should not take more than 15 to 30 minutes.
