Raspberry Ice Cream
Ingredients Egg yolks 2
Icing sugar 70g
Skim milk 200mL
Double cream (or thickened) 200mL
Raspberries 300g
Method
In a bowl, beat the egg yolks and caster sugar until the mixture is creamy
and light. Then add the cold milk and combine. Add the cream to the egg
mixture and stir until well combined.
Puree the raspberries until smooth and add to the mixture. Stir until well
combined. Cover the mixture with cling wrap and chill in the refrigerator for
at least 4 hours.
With the paddle rotating, pour the mixture through the chute into the inner
bowl of the ice cream maker. Leave the machine churning until the mixture
has reached the desired consistency. If all ingredients were well chilled, and
the bowl thoroughly frozen, this should not take more than 15 to 30 minutes.
Simple Banana Ice Cream
Ingredients Ripe, large banana 1
Caster sugar 50g
Skim milk 200mL
Double cream (or thickened) 100mL
Method
In a bowl, mash the banana until smooth.
Add the remaining ingredients and whisk, or beat using a hand mixer on a
low speed, until well combined. Cover the mixture with cling wrap and chill
in the refrigerator for at least 4 hours.
With the paddle rotating, pour the mixture through the chute into the inner
bowl of the ice cream maker. Leave the machine churning until the mixture
has reached the desired consistency. If all ingredients were well chilled, and
the bowl thoroughly frozen, this should not take more than 15 to 30 minutes.
