Function Description
The Blixer is engineered to perform various tasks, including chopping, pureeing, fine chopping, mixing, and emulsifying. It can process a wide range of ingredients such as vegetables, meats, cheese, and liquids for sauces, soups, and mayonnaise. The Blixer arm, a key component, is dedicated to scraping the upper part of the bowl and wiping the internal surface of the lid. This action helps re-incorporate small food particles stuck away from the blades, maintain visibility of the preparation, and contribute to food turbulence for consistent purees.
Important Technical Specifications
The Blixer models come in different configurations:
- Blixer® 5 G and Blixer® 7 (Three-phase): These models are fitted with a 208-240 V / 60 Hz / 3 motor. They are supplied with a four-wire cable (one earth wire, three phase wires) for connection to an appropriate electrical plug or isolator. The motor rotation must be counter-clockwise, and if it turns clockwise, two wires need to be swapped.
- Blixer® 5 V.V. and Blixer® 7 V.V. (Single-phase): These models feature a variable speed motorization with an AC Induction Motor and a Variable Speed Drive. They come with a power supply cord that plugs into a standard NEMA 5-20P 120 Volt, 60 Hz, 1 phase, 20 Amp grounded power outlet. The variable speed potentiometer allows for speeds between 300 and 3,500 rpm.

Safety Features:
- Magnetic Safety Device and Motor Braking System: The motor stops as soon as the lid is opened.
- Thermal Overload Circuit-Breaker: The unit automatically shuts off if it overheats due to an overload condition. After cooling, the circuit-breaker can be reset by pressing a button on the bottom left front of the motor base.

- Countdown Mode: Displays 0.00 and can be set directly. Increments one second at a time when the motor is operating. Stops if the motor stops and resumes when it restarts. Automatically stops after 9 minutes (V.V. models) or 5 minutes (standard models).
- Timer Mode: Allows users to adjust processing time from 0.05 (5 seconds) to 9.00 (9 minutes). The timer increments one second at a time, stopping the processor and sounding a buzzer when it reaches 0.00.
- Pulse Button: Starts the processor in Countdown Mode when held down, returning to the previous timer display when released.
- Standby Mode: Activates if the processor is not used for more than 10 minutes (motor not operating). Can be cancelled by pressing any button or the "ON" button.
- Deactivating/Reactivating Timer: Press "ON" and "OFF" buttons simultaneously for several seconds to turn off or reactivate the timer.
General Operation:
- Loading: Do not fill the bowl with solid food over ¾ full or liquid food above the tube in the center of the bowl. Cut products into equally sized portions (2 inches) for consistent results. For frozen products, portions should not exceed 1 inch.
- Speed Selection: Low speed (1,800 rpm) is suitable for initial emulsifying, limiting splash, and processing most solid foods. High speed (3,600 rpm) is typically used to finish emulsifying sauces or liquefying soups.
- Chopping: Use quick start/stop actions ("Pulse") with speed set in the Medium range.
- Pureeing/Fine Chopping: Start with Low speed until finely chopped, then increase to High speed to finish.
- Mayonnaise: Add ingredients (eggs, salt, sugar, mustard, pepper), turn on at Low speed, and slowly pour oil through the lid hole.
Maintenance Features
Cleaning:
- Safety First: Always unplug the appliance before cleaning.
- Motor Base: Never immerse the motor base in water. Clean with a damp cloth or sponge. Remove food particles and liquids first with a dry cloth, then wipe with a damp cloth and mild cleanser. Dry with a clean cloth. Clean around the shaft seal and motor shaft with a small brush. Sanitize with a clean cloth sprayed or dampened with sanitizing solution.
- Bowl: Remove the lid and then the bowl from the motor base. For solid consistency, remove the blade and empty the bowl. For liquid consistency, the bowl can be rinsed by filling it with hot water and switching on for a few minutes.
- Blades: The blade assembly should be taken apart and cleaned after each meal preparation period or at the end of the day. Handle blades with cut-proof gloves as they are extremely sharp.
- Blixer® Arm: Dismount the Blixer arm by holding it in one hand and the middle of the blade in the other, pressing the two pieces together, and turning the handle 45° anticlockwise. The two parts can then be removed from the lid for cleaning.
- Detergents: Use metal-safe detergents for aluminum parts. For plastic parts, avoid overly alkaline detergents (e.g., those with caustic soda or ammonia) as they can degrade plastic rapidly. Never use pure bleach. Follow detergent manufacturer instructions for correct solution strength.
Regular Checks:
- Seals: Replace seals every 3 to 6 months and lubricate with food-safe grease.
- Motor Shaft Seal: Periodically examine to ensure a seal against liquids. Replace if wear or erosion is noted.
- Attachments: Maintain and check attachments regularly, especially if processing ingredients with corrosive agents (e.g., citric acid).
- Power Cord/Plug: Never operate the appliance if the power cord or plug is damaged.
- Malfunctions: If the machine malfunctions, discard any food being processed and refer service to qualified maintenance technicians. Do not open the motor housing as there are no user-serviceable components inside.
