Overview

This document provides the operating instructions for the Rühle Miknetum MPR 500, a food processing machine designed for mixing, salting/seasoning, marinating, and tumbling meat products and salads. The machine is manufactured by Rühle GmbH, located in Grafenhausen, Germany.

Function Description

The Miknetum MPR 500 is specifically designed for the processing of meat products and salads. Its primary functions include mixing, salting/seasoning, marinating, and tumbling. The machine operates with a drum that can be set to various positions between 30° and 102° (discharging position) for different operating processes. It can create a vacuum, and its operation is managed via a tablet PC, which should only be operated by finger touch or with a stylus. The machine is designed for single-person operation in most life cycle phases, with exceptions for specific tasks requiring two people (e.g., installation/removal of lid, tumbling arm, mixing arm, standard trolley support, protective gearbox cover, transport of machine parts, and maintenance work inside the drum).

Usage Features

The Miknetum MPR 500 is intended for use during work by persons over 18 who have been instructed in its operation. It must be used with a single tablet PC running the RÜHLE application software. Misuse, such as processing non-foodstuffs, operating in explosive atmospheres, or connecting multiple tablet PCs, is strictly prohibited. The lifting aid is designed only for standard trolleys and must not be overloaded or used for lifting persons.

Safety is paramount, with several warnings and instructions:

  • Emergency Stop: The machine must be shut down immediately if the emergency-stop switch does not function. To fully shut down, the emergency-stop switch must be pushed, the main switch turned to "0" - OFF, and the power plug pulled. The Tablet PC should also be switched off.
  • Automatic Drum Movement: The drum moves automatically based on application programs. A 5-second alarm (horn) sounds before automatic movement. No person should be within the working range (front distance at least 1.2 m over the entire machine width) while the program is running.
  • Power Failure: If power fails during program execution, the machine will automatically restart and continue the program from the point of interruption once power is reinstated, preceded by a startup warning horn.
  • Temperature: Temperatures down to -25 °C may be generated in the drum, requiring appropriate precautions and hand protection.
  • Moving Parts: Tumbling/mixing arms should not be touched when moving. Their rotational speed is restricted when the lid is open for safety.
  • Lifting Aid: Ensure the standard trolley is correctly seated and locked in the lifting aid support before each lifting operation. The lifting aid must be moved to the bottom before the drum can be swiveled.
  • Lid Operation: The lid cannot be opened under vacuum or if not fully aerated. If a program is paused and "Open lid" is actuated, aeration will be prompted before the lid can be opened.
  • Lid Seal: The lid seal must be correctly inserted. A pressure loss indication on the display (if vacuum-capable) confirms correct sealing.
  • Discharge: When emptying the drum, precautions must be taken to ensure no person stands in the discharge area.
  • Falling Goods: If the drum is inclined downwards and aerated or the lid opened, goods will fall out.

Maintenance Features

Maintenance work is categorized into regular care, regular maintenance, and repairs. Only Rühle service technicians or Rühle-authorized personnel may perform service work, with specific qualification certificates required for each task.

General Maintenance Guidelines:

  • Safety: All safety instructions must be observed.
  • Modifications: The machine must not be modified.
  • Spare Parts: Only Rühle spare parts and accessories should be used.
  • Documentation: The operating instructions and all technical documents must be supplied when reselling the machine.
  • Protective Devices: Proper functioning of protective devices must be checked at least once a year by a Rühle service engineer.
  • Electrical Work: Work on electrical equipment must only be carried out by qualified technicians, with the machine disconnected from the mains. A waiting time of at least 10 minutes after switching off is required for capacitors to discharge.
  • Cooling System: Work on the cooling unit and system may only be carried out by a refrigeration installer.
  • Side Covers: Reaching into the machine by opening side covers is strictly prohibited during "Regular care" activities.
  • Alarms: The start-up alarm (horn) is extremely loud when the side cover is off, requiring hearing protection.
  • Surfaces: Beware of hot or cold surfaces (drives, cooling unit) during maintenance.
  • Welding/Cutting: Permission from Rühle customer service is required for welding or cutting work.

Regular Care (at least once per week):

  • Disassemble the machine according to cleaning instructions.
  • Check for parts moving with difficulty, material abrasion, or other signs of wear.
  • Check the hygienic condition and function of the lid seal.
  • Check the function and firm seating of closures at stripper and mixing arms (or blind plugs) and the lifting aid.
  • Check the hygienic condition of the stripper rubber on the tumbling arm.
  • Clean the air intake pipe thoroughly.
  • Check the drum positioning (contact Rühle service if necessary).
  • Check the lifting aid (standard trolley support).
  • Check the lid holder.
  • Check the chain lock for flawless function.
  • Visually check the chain for wear.
  • Visually check the steel cable for fraying.
  • Report any abnormalities to the supervisor immediately.

Regular Maintenance (every 2000 hours of operation or at least once per year):

  • Inspect safety devices.
  • Carry out a test run with the machine open (caution: moving parts).
  • Check and replace air filter and air oil separator of the vacuum pump if necessary.
  • Change the oil in the vacuum pump.
  • Check cooling performance of the cooling unit; service and clean condenser if necessary.
  • Check function of pressure transmitters and temperature sensors.
  • Inspect hoses (vacuum system).
  • Check radial shaft seals for tightness; replace if necessary.
  • Read out the error memory (frequency converter).

Lubricants:

  • Hygiene Area: Multi-purpose grease OKS 476 white (food technology NSF H1, Reg. No. 137619) for replacing seal rings.
  • Other Areas:
    • AUTOL TOP 2000 (high pressure grease with synthetic base oil) for moving parts like drum swiveling drive, flange drive tumbling arm. Requires protective gloves, eye protection, protective clothing, and protective mask.
    • 5182 PYROSHIELD® SYN OPEN GEAR GREASE (synthetic high-performance lubricant) for moving parts like brass ring drum swiveling (drum side). Requires protective gloves, eye protection, protective clothing, facial protection, and adequate ventilation.

Cleaning Instructions:

  • The machine is designed for complete cleaning of all food-contact parts.
  • Cleaning staff must notify the supervisor of defects, use specified cleaning agents and disinfectants, and wear personal protective equipment as described in Chapter 1.1.
  • Germ reduction is achieved through correct cleaning and subsequent disinfection.
  • Appropriate cleaning materials (brushes, rags) must be provided.
  • Approved cleaning products and disinfectants suitable for food product areas must be used.
  • Cleaning agents and disinfectants must be prepared according to manufacturer data sheets.
  • High-pressure cleaning is only permitted for outside surfaces, drum, lid and lid seal, intake filter and air intake pipe, tumbling arm, mixing arm, and blind plug.
  • The tablet PC and its holder must be cleaned manually and not exposed to water jets.
  • All other parts and surfaces should be cleaned with normal water pressure.

Cleaning Preparations:

  • Remove mixing arm and tumbling arm from the drum.
  • Pull off the stripper rubber at the tumbling arm (from outside to inside).
  • Pull the lid seal off the inside of the lid.
  • Remove the intake filter at the upper lid edge from its bracket.

Disposal:

  • All materials and operating fuels must be separated and disposed of according to national regulations.
  • The machine contains a cooling system with R452A refrigerant, which must be pumped off by a refrigeration installer and disposed of correctly.
  • Components containing oil (lid drive, tumbling arm drive, mixing arm drive, slewing gear, lifting aid drive, vacuum pump, compressor) require specific draining procedures. Gears/motors have draining screws, while the compressor must be drilled open.
