Overview

The Smoke Hollow Model 30168E is an electric smoker designed for outdoor leisure use. It is intended for household use only and is not to be immersed in water.

Function Description

The Smoke Hollow 30168E is an electric smoker used for cooking food outdoors. It operates by heating wood chips to produce smoke, which infuses food with flavor. The smoker features multiple cooking grids, a water pan for moisture, and a wood chip box for smoke generation. An electric heating element provides the heat, controlled by an external controller. A heat indicator on the door helps monitor the internal temperature.

Important Technical Specifications

  • Protective Mesh: 1 piece (C008)
  • Hardware: Various bolts (1/4-20x5/8", 10-24x1/2", 10-24x1", 10-24x5/8", 10-24x3 1/4"), flange nuts, and lock washers.
  • Recommended Extension Cord: 12/3 or 14/3 grounded-type with a rating of at least 15 amps, marked "W-A" and "Suitable for Use with Outdoor Appliances."

Usage Features

  • Outdoor Use Only: This smoker is designed exclusively for outdoor use and should not be operated indoors or in an enclosed area.
  • GFCI Protection: Must be used with a 3-wire grounded outlet wired for 120 volts and GFCI protected at 15 or 20 amps.
  • Temperature Control: The electric controller allows adjustment of the heating element to achieve desired smoking temperatures, typically between 220°F and 250°F. The heat indicator on the door provides an approximate internal temperature reading.
  • Cooking Capacity: Multiple cooking grids allow for smoking various food items simultaneously.
  • Moisture and Flavor: A water pan is used to add moisture during smoking, and a wood chip box is provided for adding wood chips to generate smoke and flavor.
  • Curing Process: Before first use, the smoker must be cured to minimize damage to the exterior finish and remove paint odors. This involves coating interior surfaces (excluding the electric element and controller) with vegetable oil and heating the smoker for two hours.
  • Food Preparation: Food should be placed in a single layer on cooking grids, allowing space for smoke and moisture circulation. The water pan should be filled with warm water or marinade to ½ inch below the rim.
  • Monitoring: Periodically check the water level in the water pan and add more if needed. Use a meat thermometer to ensure food is fully cooked, as the door's heat indicator is not an accurate meat temperature reading.
  • Safety Precautions:
    • Keep the smoker away from swimming pools, hot tubs, and wet surfaces.
    • Do not immerse the cord, controller, plug, or heat element in water.
    • Avoid touching hot surfaces during use; use handles or knobs.
    • Do not leave the smoker unattended when in use, especially around children and pets.
    • Maintain a 5-foot clearance from combustible materials.
    • Do not use on wooden or other combustible surfaces.
    • Ensure the extension cord connection is dry and off the ground.
    • Unplug the smoker from the electric outlet when not in use and before cleaning.
    • Do not move the smoker while it is hot.
    • Always attach the controller plug to the appliance first, then plug the cord into the wall outlet. To disconnect, turn the control to "off," then remove the plug from the wall outlet.

Maintenance Features

  • Cooling Before Cleaning: Always allow the smoker and all components to cool completely before handling or cleaning.
  • Ash Disposal: Before storing or leaving unattended, remove remaining embers, hot coals, and ashes. Place them in a non-combustible metal container, saturate with water, and leave for 24 hours before disposal.
  • Cleaning Components: The water pan, wood chip pan, and cooking grids should be washed with hot, soapy water, rinsed, and allowed to dry. Cooking grids can be lightly coated with vegetable oil or cooking spray to prevent food from sticking.
  • Rust Prevention: A light coating of vegetable oil or cooking spray can be applied to the interior surfaces of the smoker to prevent rusting. Do not apply oil to the electric element or controller.
  • Exterior Rust: If rust appears on the exterior, clean the affected area with steel wool and apply high-temperature resistant paint. Do not apply additional paint to the interior surface.
  • Electric Element Cleaning: After the electric element has completely cooled, clean it with a damp cloth. Do not use a water spray or immerse it in liquid.
  • Storage: Store the smoker indoors in a dry location, out of reach of children, when not in use. The electric cord and controller should also be stored in a dry location.
  • Damaged Parts: Do not operate the smoker if the cord, plug, metal probe, or electric element is damaged, or if the smoker has malfunctioned. Contact the manufacturer for replacement parts.
