4. For Bag-in-Box Machines: Using an empty bag of
syrup, cut the syrup line connection from the end of
the bag.

5. Connect the syrup line to the syrup connection that
was cut from the syrup bag.

6. With the bag connector attached to the syrup line,
place the syrup line into the pail of sanitizing solution.

7. Press the PRIME key. This will cause the sanitizing
solution to flow through the lines and into the mix
hopper.

8. Place a pail beneath the sampling valve, which is
located behind the front drip tray. Slowly open the
sampling valve, and allow sanitizer to flow through
this line and into the pail. After approximately 1/2 gal.
(1.9 L) of sanitizer has been dispensed, close the
valve.
9. Prepare a pail of approved 100 ppm sanitizing
solution (examples: 2-1/2 gal. [9.5 L] of Kay-5
®
or 2
gal. [7.6 L] of Stera-Sheen
®
). Use warm water and
follow the manufacturer’s specifications.
10. With the pail beneath the door spout, open the draw
valve and relieve all pressure from the freezing
cylinder. Remove the hopper cover. Slowly pour the
sanitizing solution into the mix hopper until the
hopper becomes 1/4 full of sanitizing solution.
