Meat Quality Troubleshooting
The product served from the grills is the result of cook times, temperatures, pressures, and operations. Use the
following chart to troubleshoot poor meat quality and to educate the operator.

Problem Probable Cause Remedy
1. Undercooked. a. Freezer burn. a. Use fresh product.
b. Worn release material sheet. b. Rotate the release sheets daily and replace the release
sheets when worn.
c. Improper cook times. c. Set the time as instructed in the Operator's Manual.
d. Improper cook temperatures. d. Set proper temperatures and calibrate the grill.
2. Overcooked. a. Incorrect cook times. a. Set time as instructed in the Operator's Manual.
b. Improper meat removal. b. Remove meat as instructed in the Operator's Manual.
c. Improper cook temperatures. c. Set proper temperatures and calibrate the grill.
3. Improper sear. a. Worn release material sheet. a. Rotate the release sheets daily and replace the release
sheets when worn.
