The Welbilt® Baker's Select ABM2H22 is an automatic bread machine designed for household use, capable of baking both 1 1/2 lb. and 2 lb. horizontal loaves. It features a two-paddle horizontal bread pan, which helps produce traditionally shaped bread.
Function Description:
This bread machine automates the entire bread-making process, from combining ingredients and kneading to rising and baking. It offers 33 different settings, allowing for a wide variety of breads, doughs, jams, and cakes. For dough-only cycles, the machine prepares the dough, which can then be removed, shaped, and baked in a conventional oven or deep-fried. The JAM setting is specifically for making jam from fresh fruits. A BAKE-only setting is also available for additional baking time or for making gluten-free breads.
Important Technical Specifications:
- Loaf Sizes: 1 1/2 lb. (LARGE) and 2 lb. (EXTRA LARGE)
- Loaf Shape: Horizontal
- Kneading Mechanism: Two paddles
- Settings: 33 pre-programmed cycles (refer to "Bread Machine Cycle Times" on page 15 for details)
- Power: 120-volt AC outlet (requires a UL certified extension cord rated no less than 15 amperes and 120 volts if a longer cord is needed)
- Temperature Sensors: Displays "E01" if the chamber temperature is above 122°F and "E00" if below 14°F.
Usage Features:
- Control Panel: Features a display window that shows the selected program number, loaf size, crust color, baking time countdown, and current stage of breadmaking (TIMER, PREHEAT, KNEAD, REST, RISE, BAKE, WARM, END).
- Touchpad Controls: SELECT, COLOR, LOAF, TIMER, and START/STOP buttons. A beep confirms each button press.
- SELECT Key: Used to choose from various baking cycles, including BASIC, FRENCH, WHOLE WHEAT, SWEET, ULTRA FAST, QUICK BREAD/CAKE, DOUGH, BAGEL DOUGH, JAM, and BAKE. Each cycle automatically assigns the necessary time.
- COLOR Key: Allows selection of crust color (Light, Medium, Dark) for BASIC, FRENCH, and WHOLE WHEAT settings. It also enables RAPID cycles for these bread types.
- LOAF Key: Selects the desired loaf size (1 1/2 lb. or 2 lb.) for French, Basic, Whole Wheat, Sweet, and Ultra Fast settings.
- TIMER Key: A 13-hour programmable delay timer allows users to set delayed completion up to 12 hours and 58 minutes later. Time can be adjusted in 10-minute increments. Not available for Ultra Fast, Quick, Jam, and Bake settings.
- START/STOP Key: Initiates operation or the TIMER countdown. Holding it down stops operation or cancels a TIMER setting.
- Viewing Window: A large window allows observation of the breadmaking process. The lid can be lifted during mixing and kneading stages, but not during the baking cycle (approximately the last hour) to prevent bread collapse.
- Ingredient Addition: Ingredients must be added in the specified order, with liquids first, followed by dry ingredients, and yeast last, ensuring yeast does not touch liquids, especially when using the delay timer. Accurate measurement is crucial for best results.
- Fruit and Nut Beep: A signal indicates when to add ingredients like fruits, nuts, or chips, preserving their shape and texture. This function can be bypassed if using the TIMER, but ingredients may be chopped.
- RAPID Settings: Available for BASIC, FRENCH, and WHOLE WHEAT breads, allowing for faster baking times.
- ULTRA FAST Setting: Bakes bread in 58 minutes, requiring specific recipes with very warm water and a large amount of fast-rising yeast.
- Keep Warm Function: Automatically keeps finished bread warm for up to one hour after baking, preventing sogginess. It stops when the unit is turned OFF/STOP or unplugged. Not available on all cycles.
- Cool-Touch Exterior: Designed for user safety.
- Power Loss Memory: Resumes the cycle from where it left off after a short-term power loss.
- Dough Consistency Check: After 5 minutes of kneading, the dough should be a soft, tacky ball. Liquid or flour can be added in 1/2-1 TBSP increments if needed.
- Bread Removal: Use pot holders or oven mitts. If kneading blades stick, fill the pan with hot water to loosen them. Do not use metal utensils to avoid scratching the non-stick surface.
- Slicing and Storing: Allow bread to cool on a wire rack for 15-30 minutes before slicing. Store unused bread tightly covered at room temperature for up to three days or freeze for longer storage.
Maintenance Features:
- Cleaning: Unplug the unit and allow it to cool before cleaning.
- Outer Body, Lid, and Baking Chamber: Wipe with a damp cloth or sponge to remove flour, crumbs, or other materials. Dry thoroughly. Do not immerse or splash with liquid.
- Baking Pan and Kneading Blades: Remove from the unit. Wipe the outside of the baking pan with a damp cloth. NEVER IMMERSE THE BAKING PAN in water or other liquid. Wash the inside with warm, soapy water. If kneading blades are stuck, soak the pan in hot water for 30 minutes. Clean clogged blade holes with a wooden or plastic toothpick. Do not use harsh cleansers, abrasive materials, metal utensils, knives, or sharp metal objects.
- Storage: Ensure all parts are dry before storing. Close the lid and do not place anything on top of the machine.
- Cooling Between Loaves: Allow the unit to cool completely before baking a second loaf. Opening the lid and removing the baking pan can speed up cooling.
- Error Messages: "E01" indicates the bread chamber is too hot (above 122°F); wait for it to cool. "E00" indicates the chamber is too cold (below 14°F); allow it to warm up.
