The mixers operate on a 220V, 60Hz, 3-phase electrical supply, requiring proper grounding. The agitator speeds vary by model, offering both low and high-speed settings for different mixing requirements. The transmission system is belt-driven across all models.

Maximum Mixing Capacity Guidelines (for AE-3050 model, other models require separate calculations):

  • Bread dough, 50% AR: 94 lbs
  • Bread dough, 55% AR: 100 lbs
  • Bread dough, 60% AR: 110 lbs
  • Whole wheat, 70% AR: 110 lbs
  • Pasta dough: 37 lbs
  • Pizza dough (thin), 40% AR: 47 lbs
  • Pizza dough, 45% AR: 62 lbs
  • Pizza dough (med), 50% AR: 94 lbs
  • Pizza dough (thick), 60% AR: 110 lbs

Note: If high gluten flour or ice water is used, reduce the dough batch size by 10%. The Absorption Ratio (AR) is calculated as water weight divided by flour weight.

Usage Features:

The spiral mixer features a user-friendly control panel, which includes a stop button, bowl rotation switch, and buttons for high and low speeds. Models AE-3050, AE-4065, and AE-5080 are equipped with dual timers for both high and low speeds, allowing for precise control over the mixing process. The AE-1220 model has a single timer.

Control Panel Operation:

  • Manual (Continuous) Mixing:
    • Turn the toggle switch to MANUAL.
    • Press the LOW SPEED BUTTON for low-speed mixing.
    • Press the HIGH SPEED BUTTON for high-speed mixing.
    • Press STOP to pause mixing; press HIGH SPEED or LOW SPEED BUTTON to resume.
  • Timed Mixing at Low Speed:
    • Turn the toggle switch to AUTOMATIC.
    • Set the LOW SPEED timer to the desired time and the HIGH SPEED timer to ZERO.
    • Press the LOW SPEED BUTTON to start; the mixer stops automatically.
    • Press STOP to pause; reset time and press start to resume.
  • Timed Mixing at High Speed:
    • Turn the toggle switch to AUTOMATIC.
    • Set the HIGH SPEED timer to the desired time and the LOW SPEED timer to ZERO.
    • Press the HIGH SPEED BUTTON to start; the mixer stops automatically.
    • Press STOP to pause; reset time and press start to resume.
  • Timed Mixing at Two Speeds:
    • Turn the toggle switch to AUTOMATIC.
    • Set both HIGH SPEED and LOW SPEED timers to desired times.
    • Press the LOW SPEED BUTTON to start low-speed mixing. The control automatically switches to high speed when the low-speed time expires. The mixer stops when the high-speed time expires.
    • Press STOP to pause; reset time and press start to resume.

The mixer is designed for easy installation on a level floor and includes adjustable feet and castors for mobility. The agitator's direction of rotation is crucial for proper operation and is indicated by an arrow on the front of the mixer. Incorrect wiring leading to reversed rotation will void the warranty.

Maintenance Features:

Regular cleaning and sanitization are critical for the mixer's longevity and to prevent food-borne diseases.

  • Daily Cleaning: After each day's use, the mixer bowl and agitator should be thoroughly washed with hot water and a mild soap solution, rinsed with a mild soda or vinegar solution, and then with clear water. The exterior should be wiped with a clean damp cloth.
  • Deep Cleaning: Periodically, the area under the machine should be cleaned by disconnecting the power cord, raising the stabilizing feet, and moving the machine.
  • Sanitization: It is important to sanitize the mixer bowl and agitator regularly. Recommended sanitizers include chlorine, iodine, or quaternary ammonium. Users should follow the directions on the sanitizer container and adhere to local health department guidelines.
  • Safety Precautions for Cleaning:
    • Always unplug the machine before cleaning, servicing, or removing components.
    • Do not clean while the mixer is in operation.
    • Do not immerse the unit in water, pressure wash, spray down, or pour water onto the mixer.
    • Do not use products containing sodium hypochlorite (bleach), abrasive materials, scrubber pads, or steel wool, as these can damage the stainless steel surface.
    • Operate the mixer only between 45°F and 95°F (7.2°C to 35°C).
    • Keep hands, clothing, and rigid objects away from the bowl and agitator during operation.

Troubleshooting:

  • Mixer will not start: Check if the bowl guard is in the lower position, the electric cord is plugged in, the electrical supply at the breaker box, the electrical box itself, and if the Emergency STOP button is reset (twist knob clockwise).
  • Mixer bowl and/or hook run in the opposite direction: The polarities on the electrical plug may be reversed. An electrician should match the correct wires with the correct contact point on the 3-phase plug.
  • Rhythmic, loud clicking or hitting noise: This may indicate a broken ball bearing, likely one meant to provide smooth operation of the rotating bowl.

Warranty:

The equipment comes with a 1-year parts and 1-year labor warranty, starting from the date of original purchase. The warranty is valid only if the properly completed warranty registration form and a copy of the purchase receipt or invoice are received by American Eagle Food Machinery, Inc. within 30 days of purchase. The warranty excludes expendable supply items (belts, agitators, bowls, safety guards) and damage due to improper installation, maintenance, abuse, or unauthorized modifications. Warranty service requires an RMA number from customer service.
