Why is there soot on the Avanzini Burner cupola?

Soot on the cupola can be caused by several factors: * The burner's air/gas ratio might not be properly adjusted, resulting in insufficient air. * The environment may lack proper ventilation. * The chimney could be dirty or closed. * The burner might be under the oven without enough oxygen. * Inadequate cleaning of the flue after converting from a wood-burning oven could be the reason. * Spacer washers might be missing between the burner and the flange sleeve. * The burner compartment may have a special opening. * Suction in the room requires sizing the air intake to account for both the air burned by the burner and the air extracted.
