31 RECOMMENDATIONS
These appliances are for professional use, only appropriately trained personnel should use them.
These appliances are intended to be used for commercial applications, for example in kitchens of restaurants, canteens, hospitals and in
commercial enterprises such as bakeries, butcheries, etc., but not for continuous mass production of food.
These appliances must be installed with sufficient ventilation to prevent the formation of an excessive concentration of substances harmful for
health within the premises in which they are installed.
Do not manually introduce cold water into a preheated well that is empty. The interface provided for the water supply must be used
Proximity: When in use as a fryer the airborne vapours contain grease. These are flammable and could ignite the oil bath if a heat source, such
as open burners, salamander etc. is located too close to the unit
NEVER LOCATE THESE UNITS IMMEDIATELY NEXT TO A SOURCE OF HEAT SUCH AS OPEN BURNERS, SALAMANDER, etc.
Do not switch the fryer function on unless the oil level is between minimum and nominal.
Do not fry except in fryer mode
Ensure that the oil bath is in good condition: replace the oil if it starts to look brown, foams or smokes excessively.
As per norm EN 60 335, the use of used oil is dangerous: it has a reduced flash point and is subject to sudden rises (fire hazard and abnormal
expansion)
Do not exceed the indicted maximum loadings.
Only work with the well lowered.
Do not heat for long periods with the well empty.
Frying mode should only be used for frying. Do not put anything in the tank except foodstuffs for frying.
Only use oils that are specifically intended for frying and seasoning. Other forms of fat, notably animal fats can contain impurities that could
become toxic at high temperatures.
The electronic control incorporates a high limit safety at 205°C. If the oil temperature exceeds this the unit will switch off and the error code EFr
will be displayed. Isolate the unit and call a service engineer.
In the event of an error message consult the error message section and follow the advice given.
Never fill or top up the oil bath if the fryer is heating up or in use.
Draining the tank: Never drain the tank if the oil temperature is over 50°C.
Oil should never be drained into the main water drainage system.
If it is built into a mobile suite never move the suite when the fryer has oil in the tank it should be drained out first.
When moving a mobile cooking suite always take precautions to avoid it tipping over and check it is level before using it again.
Monitor the condition of cooking fats or oil
