INGREDIENTS
1 lb fresh asparagus
2 cups vegetable broth
1/2 cup whole milk
2 tsp flour
1 tsp garlic powder
¾ cup plain yogurt
3 tbsp lemon juice
salt and pepper to taste
shredded parmesan
crème fraiche or Greek
yogurt, whipped until smooth

DIRECTIONS
Chop off the white ends of the asparagus. Either blanch the asparagus in boiling water, or
cook in the microwave for a few minutes. Pour the vegetable broth into the blender with
the milk, asparagus, garlic powder, and flour. Turn the knob to soup seing and blend until
smooth for about 8 minutes.
Add the yogurt and lemon juice and pulse until blended together. Pour into bowls and
garnish with the shredded cheese, crème fraiche and some fresh chives.
