Function Description

The pasta cooker is designed for commercial and collective use, specifically for cooking foods such as pasta, rice, and similar products in water. It is not intended for continuous mass production of food or as a fryer. The appliance is equipped with either gas or electric heating, depending on the model, and some electric models feature an electronic control system with automatic lifting programs.

The appliance is designed to operate with G20 gas at 20 mbar, but can be converted to other gas types following specific instructions. It requires a water supply pressure of 1.5 – 3 bar and is equipped with a safety thermostat that automatically cuts off the gas or electricity supply if temperatures exceed a set value. The A-weighted emission sound pressure level does not exceed 70 dB(A).

Usage Features

General Operation:

  • Water Filling: The tank is filled with water using a dedicated tap until the marked level is reached. For electric models with electronic control, there are quick and slow water filling options.
  • Heating (Gas Models): Features a control knob with positions for "Off," "Pilot ignition," "Min. Flame (standby stage with water kept at approximately 90°C)," and "Max. Flame (reaching temperature or boiling)." The pilot burner is lit by pressing and turning the knob while simultaneously pressing a piezoelectric igniter button.
  • Heating (Electric Models): The switch control knob has positions for "Power Off," "Low Power," "Medium Power," and "High Power."
  • Cooking: Once the water is boiling, salt can be added (pan salt recommended, or coarse salt dissolved separately). Baskets with food are then placed in the tank. The overflow pipe helps control the maximum water filling level and removes cooking froth. The heating can be adjusted based on food quantity and type.
  • Switching Off: For gas models, the knob is turned to the "Off" position to turn off the main burner, then to the "Pilot Off" position to shut off the pilot burner. For electric models, the control knob is turned to "0."
  • End of Work: After cooking, the power should be switched off, water drained (preferably after cooling to 60°C), and the tank and baskets cleaned. The main switch and water valve upstream of the appliance should be turned off.

Electric Models with Electronic Control:

  • Switch On and Temperature Control: Pressing the I/O button switches on the appliance, initiating a lamp test and automatic tank water filling. Heating starts based on the operator-set temperature. Temperature can be adjusted using INC/DEC buttons (1°C increments, or faster when held). For temperatures above 99°C, energy levels (50%, 75%, 90%, 100%) can be set. Real-time temperature can be viewed by pressing the "T" button.
  • Automatic Lifting Programs: The appliance can be equipped with 2 or 4 lifting motors. Users can program and store up to 5 different cooking times (from 15 seconds to 20 minutes, in 5-second steps) for quick recipe changes. Programs can be assigned to left and right side lifters.
  • Cooking Cycle: Pressing the SL/SR buttons starts a cooking cycle, lowering the lifter and initiating a countdown (last 10 seconds displayed on D2). The cycle can be stopped by pressing the relevant lifter button.

Maintenance Features

General Precautions:

  • Maintenance operations must be carried out by trained personnel, adhering to safety regulations.
  • The manual must be readily accessible.
  • Use only original accessories and spare parts.
  • Disconnect power before any cleaning or maintenance.
  • Do not use chlorine-containing products, metal tools, or spray water/steam for cleaning.
  • Ensure adequate ventilation in the installation area.

Routine Maintenance (Daily):

  • Clean all steel surfaces with soapy water and a cloth/sponge, drying thoroughly.
  • Clean the tank and baskets, removing food residuals, grime, fat, and starch.
  • Drain the water completely from the tank.

Internal Parts (Yearly):

  • Check the condition of internal parts and remove any dirt deposits.
  • Clean the discharge system.
  • These operations should only be carried out by specialized personnel.

Scale Removal (When Necessary):

  • Remove water stains/marks from steel surfaces using natural detergents (e.g., vinegar) or chemical products.
  • For vinegar, heat for 5 minutes, allow to work for 20 minutes, then rinse with demineralized water.
  • For chemical detergents, heat for 3 minutes, allow to work for 10 minutes.

Idle Periods:

  • Close valves or main switches.
  • Apply paraffin oil to stainless steel surfaces for protection.
  • Periodically air the premises.
  • Have the appliance checked before reuse.
  • For electric models, switch on at minimum heat for at least 45 minutes to evaporate moisture from heating elements.

Repair and Extraordinary Maintenance:

  • Must be carried out by specialized authorized personnel. Unauthorized interventions invalidate the warranty.
  • Periodically check safety devices and electrical cable insulation.

Machine Disposal:

  • Dismantling must be carried out by specialized personnel with power disconnected.
  • The appliance must be rendered unusable (e.g., by removing the power cable).
  • Components must be disposed of in a differentiated way, according to their material characteristics and local environmental protection laws. The product should not be treated as domestic waste.
