This document is an installation and operating manual for Electrolux Professional Fryers, specifically models N9E, GF9, and EF9. It provides comprehensive information for the safe and correct use and maintenance of these commercial deep fryers.

Function Description:

The fryers are commercial and collective use appliances, designed for frying foods in oil or solid fat. They are intended for use in professional kitchens of restaurants, canteens, hospitals, bakeries, butcheries, and similar commercial enterprises. The appliances are not designed for continuous mass production of food.

Important Technical Specifications:

The manual details various technical specifications depending on the model (gas or electrical, and tank capacity).

  • Gas Models (GF91M23, GF92M23, +9FRGD1GF0, +9FRGH2GF0, +9FRGD1JFT):
    • Tank capacities: 15 Lt, 15+15 Lt, 23 Lt, 23+23 Lt.
    • ISO 7/1 Connection: 1/2".
    • Nominal heat output: Ranging from 14 kW to 42 kW.
    • Type of construction: A1.
    • Arranged and tested to operate with G20 gas at 20 mbar. Conversion to other gas types is possible following specific instructions.
  • Electrical 15-18 Litres Models (+9FRED1GF0, +9FREH2GF0, +9FRED1HFO, +9FRED1HFG, +9FREH2HF0, +9FRED1HFN, +9FREH2HFN, +9FRMD1HF5, +9FRMD1HF6):

    • Frequency: 50/60 Hz.
    • Nominal max. power: Ranging from 16.1-17.2 kW to 36 kW.
    • Minimum recommended power supply cable section: 6 mm² to 16 mm².
  • Safety Thermostat: Appliances are equipped with a safety thermostat that automatically trips off when temperatures exceed a set value, shutting off gas supply (gas models) or electricity (electric models). Resetting requires specialized personnel.
  • Protection Rating: Dust and water protection rating (L) is indicated on the dataplate.

Usage Features:

  • Operation: Only specialized personnel are authorized to operate the machine. Minors and adults with limited physical, sensory, or mental abilities or without adequate experience/knowledge should not use it.
  • Oil Management: Before introducing oil, ensure the tank does not contain water. Pour oil up to the maximum level indicated by a special reference notch. When using solid fat, melt it separately before pouring. Do not leave fat in the tank after cooking.
  • Frying Process: Place the basket with food slowly into the boiling oil to prevent froth from spilling over. If froth occurs, stop dipping briefly.
  • Temperature Settings: Recommended frying temperatures are provided:
    • Foods that do not disperse pollutant substances: 180°C/185°C.
    • Breaded foods: 175°C/180°C.
    • Floured foods: 170°C.
  • Oil Level: Top-up the oil bath whenever it falls below the minimum level (marked by the special reference notch) to prevent fire hazards.
  • Oil Draining: Tank emptying must be done when the oil is cold.
  • Gas Models Specifics:
    • Switching On: Turn the knob to the "Off" position, then press and turn to the "Pilot ignition" position. Press the knob to activate the flame failure device and light the pilot burner. Once the pilot burner is lit, release the knob and turn it to the "Burner" position to light the main burner.
    • Switching Off: Turn the knob to the "Off" position.
  • Electrical Fryers Specifics:
    • Switching On: Turn the knob to the desired temperature. A green indicator light signals power, and a yellow light indicates heating elements are on.
    • Switching Off: Turn the knob to the "Off" position.
  • Interlock: A thermal-regulative locking device is enabled until the thermocouple is hot, preventing the pilot flame from being shut off for about 40 seconds to allow accumulated gas to flow out.

Maintenance Features:

  • General Safety: Always disconnect the appliance from the power supply (electricity, gas, water) before any cleaning or maintenance. Do not use water jets or steam cleaners on the machine.
  • Routine Cleaning (Daily):
    • Clean all steel surfaces with soapy water and a cloth/sponge.
    • Clean appliance tanks/containers with boiled water and soda.
    • Remove grease, oil, and food residuals from trays, drawers, and collection containers.
    • Filters should be removed, washed with degreasing soap, rinsed, dried, and refitted. Replace if deteriorated.
  • Cleaning Fryers with Internal Heating Elements:
    • Allow the appliance to cool.
    • Drain oil from the tank.
    • Lift the heating element unit using the support bracket and tilt it into the tank expansion zone. This action cuts power to the heating element.
    • Carefully clean the tank and heating elements.
  • Internal Parts (Every 6 Months):
    • Check the condition of internal parts.
    • Remove any dirt deposits.
    • Check and clean the discharge system.
    • These operations must be carried out by specialized personnel.
  • Preventive Maintenance (Every 6 Months to 10 Years):
    • Remove any deposits of dirt inside the appliance.
    • Check internal parts, discharge system, mechanical protection devices, machine structure, safety signs, and electrical control panel.
    • A general machine overhaul is recommended every 10 years, including checking all components, electrical equipment, corrosion, and pipes.
    • Electrolux Professional recommends service by authorized engineers every 12 months.
  • Repair and Extraordinary Maintenance: Must be carried out by specialized authorized personnel. Unauthorized intervention invalidates the warranty.
  • Spare Parts: Use only original accessories and/or spare parts to maintain warranty and safety compliance.
  • Disposal: Dismantling must be carried out by specialized personnel with the power supply disconnected. Remove the power cable and compartment closing devices to render the appliance unusable. Dispose of parts differentiated by material (metals, oils, greases, plastic, rubber) at a specialized collection/scrapping center, adhering to local environmental regulations.
