Also, verify that the supply air capture jet fan is operational. Check that the exhaust fan is appropriately sized for the required duty. Supply air imbalance can also be a culprit, so check the supply fan and adjust its speed to balance the kitchen. Excessive kitchen drafts can impede fume removal; try closing doors and windows or turning off draft-causing fans. If equipment has been moved from its original position, check the equipment list and revise the exhaust system design as necessary. Finally, service the filters if the secondary treatment system requires it.
