Function Description:
The Open Fryer is designed for frying food, offering precise temperature control and programmable cooking cycles. It features a control panel for setting parameters such as temperature and cooking time, and includes indicators for heating status, waiting, and readiness. The device supports both electric and gas heating models (OFE-321/322 for electric, OFG-321/322 for gas). A key feature is its oil filtration system, which includes an oil pump for draining and filtering oil, contributing to oil cleanliness and extending heating element life. The gas models incorporate a combustion controlling system with electronic ignition, constant temperature control, flameout protection, and heat power adjustment.

The equipment has an ordinary waterproof grade of IXP3. The maximum oil temperature should not exceed 200°C to prevent fire and maintain food quality. An overtemperature protection device is in place, which cuts off heating power if the oil temperature reaches 230°C, requiring manual reset when the temperature drops to 150°C.
Usage Features:
The Open Fryer is designed for user-friendly operation with a comprehensive control panel:
- Control Panel: Features an information display window, timer indicator lamps, heating indicator lamp, wait indicator lamp, and ready indicator lamp.
- Program Selection: Users can select from 1-6 pre-set programs using dedicated buttons. For OFE-322 and OFG-322 models, programs 4-6 allow separate time settings for the left and right frying pots.
- Parameter Setting: Users can set temperature (0-200°C) and timer (0-59 minutes 59 seconds) parameters. A password-protected internal parameter setting allows adjustment of advanced settings like temperature output mode, oil filtering frequency, Celsius/Fahrenheit switchover, melting temperature, and heating dead zone.
- Oil Melting Function: The device includes a "MELTING" mode to melt solidified oil, automatically quitting when the temperature reaches 110°C.
- Safety Features:
- Requires an air switch matching the machine's specified power.
- Ground terminal must be connected to a high-performance ground wire.
- Power cables and sockets must meet electrical power requirements and withstand maximum current.
- Oil level must be maintained between "MIN" and "MAX" lines, at least 2-3mm higher than heating elements.
- Automatic temperature control and flameout protection (for gas models) ensure safe operation.
- Warnings for continuous high temperature and cooking time expiration.
- Oil Filtration: Equipped with an oil pump for filtering oil. The "PUMP" button activates the filtration process. A clean filter envelope should be used and changed regularly.
- Basket Handling: The fryer accommodates baskets with handles for easy food removal and oil drainage.
- Lid: A movable lid is provided for cleaning and keeping the pot warm, with a caution against water drops falling into hot oil.
Maintenance Features:

- Cleaning:
- Oil residue and dirt on heating elements should be cleaned regularly to maintain oil cleanliness and heating efficiency.
- The oil pump head needs to be cleaned if it gets stuck or if oil freezes, to prevent motor burnout. Detailed disassembly instructions for the oil pump cover are provided.
- The oil drain valve should be opened to drain oil when it is near ordinary temperature, after cutting off power.
- Component Checks:
- Before starting, all electronic components should be checked.
- The power line should be inspected for damage or scratches and replaced immediately if found. Suggested replacement cables are YCW and YZW model flexible oil soft cables, with wire diameters meeting specified power requirements.
- Qualified electricians should handle installation, electrical connections, and repairs.
- Troubleshooting: In case of sudden breakdown or abnormal situations, stop using the machine, cut off power, and contact the factory or distributors, providing the equipment's name, model, and description of the fault. Do not attempt to dismantle or repair the equipment yourself, except for daily maintenance.
- Oil Level Management: The manual emphasizes the importance of maintaining the correct oil level, as shown in Chart (11), to prevent issues during operation.
- Heater Assembly: Instructions for assembling heaters emphasize ensuring the clamp is securely fixed for stability and safety.
