IF USING PILLOW PACKS
1. Discard any open or damaged packs
2. Inspect the containers used for steeping and or dispensing the coffee, including steeping baskets or
toddy nylon filter, for cleanliness
3. If using Kegs, inspect, clean and sanitize kegs
4. Clean and sanitize the containers and filters following the weekly cleaning instructions
(see attached guide)
5. Once the container/dispenser if clean prepare coffee for steeping (12 hours)
(for use in dispenser or kegs)
IF USING BAG-IN-BOX (BIB)
1. Discard any open or partially used product
2. Check expiration dates–discard BIBs that are past date.
3. Make sure that there is chilled product ready.
IF USING ARIA, KEGERATOR OR BROOD COLD BREW UNITS:
1. Open the unit and verify there is no product in the unit ( Bag in Box or keg with coffee)
Make sure kegs are clean and sanitized.
2. If the unit is unplugged check the pump switch is in the off position. (Aria and Kegerator the
pump switch is inside the unit. The Brood unit pump switch is on the front of the unit)
Plug in the unit keeping the pump switch in the OFF position. (the Aria requires two110v outlets)
The refrigeration unit should chill to 38-40°F
3. Inspect the dispense lines for black buildup or spots.
A. If you detect black residue: DO NOT USE THE UNIT. The lines must be replaced
Call illy Caffe Technical service to schedule a service call.
B. If you do not detect black buildup; Follow the weekly cleaning and sanitizing protocol and
soak the tap (see attached guides)
4. Once the system and tap are clean and coffee is steeped or Bag in Box is chilled:
Do not serve product unless it is cold
A. Put steeped coffee into the keg, and connect it to the Aria or Kegerator. OR
B. Connect the pre-chilled Bag in Box
5. Turn the pump switch on to the unit. Put a container under the tap. Set the tap on still brew.
Pull down on the tap and purge air from the system.
6. Pour a glass of still brew and a glass of Aria to taste.

Overview

Function Description:

The primary function of these devices is to provide a ready supply of chilled cold brew coffee. They are designed to maintain the coffee at an optimal serving temperature (38-40°F) and dispense it on demand. The systems integrate a pump to facilitate dispensing and include features for easy setup, operation, and maintenance. They are suitable for environments where cold brew coffee is served regularly, such as coffee bars or restaurants.

Important Technical Specifications:

  • Temperature Control: Both Aria and Brood units are designed to chill and maintain cold brew coffee at a temperature range of 38-40°F.
  • Power Requirements: The Aria unit requires two 110V outlets, while the Brood unit requires a single 110V outlet.
  • Holding Time (Kegs): For cold brew stored in kegs within the Aria unit, the maximum holding time is 3 days, provided it is kept closed and under refrigeration.
  • Holding Time (Bag-in-Box): For Bag-in-Box (BIB) cold brew, the maximum holding time is 5 days, also requiring refrigeration. The Brood unit specifically notes that the BIB should be pre-chilled before use.
  • Cleaning Solutions: The manual specifies the use of "Urnex Clearly Cold Solution" for cleaning and "Urnex Complete Café Solution" for sanitizing.
  • Dilution Ratios for Cleaning/Sanitizing:
    • Service Ideas Brewer: 10 liters water with 25mL solution.

      • 1 liter container: 2.5 mL solution with 1 liter water.

Usage Features:

  • Setup:
    • Units should be placed on a counter near an open, unused 110V outlet, allowing ample room for door opening and container placement.
    • Users must verify the pump switch is in the "OFF" position before plugging in the unit.
    • For keg systems (Aria), pre-made cold brew is poured into a clean, sanitized keg, leaving 2 inches from the top. The keg is then connected to the unit's dispense line.
    • For Bag-in-Box systems (Aria and Brood), the BIB is prepared by locating and sliding the nozzle into a designated slot, then connecting the dispense line to the nozzle. The BIB stand (for Aria) or the BIB itself (for Brood) is placed inside the unit.
    • Purging Air: After setup, a container is placed under the tap, and the tap is opened with the pump "ON" to purge air from the system until coffee flows freely.
    • Cool-down Time: The unit requires 20-30 minutes to cool down to the optimal serving temperature before serving.
    • Daily Purge: At the beginning of the day or if the system has not been used for more than 4 hours, 2 ounces of coffee must be purged and discarded before serving.
  • Logging: Users are instructed to log the preparation and expiration dates of the coffee, as well as the date a BIB was connected.
  • Troubleshooting (Aria):
    • No Coffee Dispensing: Check if the tap is closed, open the unit door, and check the pump power light.
    • Light On: Inspect the black Aria tap spout for obstructions, removing and cleaning as necessary (being careful not to lose the o-ring and plastic flow straightener).
    • Light Blinking: Indicates the pump shut-off circuit has activated (due to running for 60 seconds without liquid or pressure). Reactivate by turning the pump switch "OFF" then "ON." Also, check for coffee in the container and proper connection of the intake black ball lock to the keg's "OUT" stem.
    • Light Off: Toggle the power switch "OFF" then "ON." Check if both power cords are plugged in and if the pump power cable is plugged into the top of the pump. If issues persist, contact Illy Caffe Technical Service.

Maintenance Features:

  • Cleaning and Sanitizing Protocol: A detailed weekly cleaning and sanitizing protocol is provided for all units (Pillow Packs, BIB, Aria, Kegerator, Brood).
    • Pillow Packs: Inspect and clean containers, steeping baskets, nylon filters, and kegs. Sanitize kegs.
    • Aria/Kegerator/Brood:
      • Daily Cleaning: Fill the container with water and a measured dose of "Clearly Cold" cleaner. Place the basket insert in the solution. Run 1 liter through the tap and let sit for 15 minutes. Empty, rinse, and run 1 liter of clean water through the spout. Immerse the tap spout in warm water for 5 minutes and wipe down the unit.
      • Weekly Cleaning (Aria/Kegerator - Cleaning Bottle): Fill a cleaning bottle with 1 liter of clean water, secure the lid. Turn off the pump, open the door. Place a container under the spout, open the tap to release residual pressure. Disconnect the black dispense line from the keg/BIB. Attach the black connector to the cleaning bottle stem. Turn the pump switch back on. Place a container under the tap, run the entire liter of water through the system. Re-attach the black dispense line to the keg/BIB.
      • Weekly Cleaning (Aria - Keg): Open the door, turn off the pump. Open the tap to purge residual pressure. Remove the keg, disconnect dispense line and grey air intake valve. Remove the lid, discard unused coffee, rinse the keg. Add water and "Clearly Cold" solution to the keg, put the lid on, and swirl. Reattach dispense line, return keg to unit. Turn pump "ON," run solution for 60 seconds. Place grey air intake valve in a large container and let soak for 15 minutes. Repeat steps using "Complete Café" sanitizing solution (add water first, then solution). After running sanitizing solution for 60 seconds, place the grey air intake valve into the large container and let soak for 1 minute. Remove the keg, disconnect dispense line, remove lid, empty remaining sanitizing solution. Reattach grey air intake valve to the "IN" stem. Invert the keg and let air dry for at least 10 minutes (do not rinse). Flush keg and lines with fresh water before next use.
      • Weekly Cleaning (Brood - Cleaning Bottle): Fill cleaning bottle with 500ml clean water. Add 2.5ml "Clearly Cold" solution, add another 500ml water, secure lid. Turn off pump. Place container under tap, pull handle down to purge residual pressure. Disconnect black dispense line from BIB. Attach black ball connector to cleaning bottle stem, ensure secure, close door (bottle outside), turn on pump. Place container under tap, run solution for 20 seconds, let stand for 15 minutes, then run remaining solution. Turn off pump, disconnect bottle. Rinse cleaning bottle with clean warm water. Repeat steps using "Complete Café" sanitizing solution (let stand 1 minute, then purge, air dry for 10 minutes). Fill bottle with fresh water, turn on pump, run 1 liter through system before reattaching BIB and turning on pump.
  • Inspection: Regularly inspect dispense lines for black buildup or spots. If detected, the unit should not be used, and technical service must be called for line replacement.
  • Tap Soaking: For Aria/Kegerator/Brood, soak the tap (following attached guides) as part of weekly cleaning.
  • Air Drying: After sanitizing, kegs and basket inserts should be air-dried for a specified duration (e.g., 15 minutes for Brewista, 10 minutes for Aria kegs).
