The Kenwood Chef and Major KMC010 - KMM020 series is a versatile kitchen machine designed for a wide range of culinary tasks, from baking to food preparation. It is more than just a mixer, offering a robust, reliable, and adaptable solution for modern kitchens.

Function Description:

This Kenwood kitchen machine serves as a central hub for various food preparation tasks, utilizing a powerful motor and a selection of interchangeable attachments. Its primary function is mixing, kneading, and whisking, but it extends its capabilities through multiple outlets for specialized attachments.

The machine features three attachment outlets:

  • High-speed outlet (1): Used for attachments requiring high rotational speed.
  • Medium-speed outlet (2): For attachments operating at a moderate speed.
  • Slow-speed outlet (3): Designed for attachments that require lower speeds and higher torque, such as grinders and pasta makers.

The main mixer head (5) houses the tool socket (4) for the bowl tools. The head-lift lever (9) allows for easy raising and lowering of the mixer head to attach or remove tools and the bowl. The on/off and speed switch (10) controls the machine's operation and speed settings, including a pulse function (P) for short bursts of power.

Key Mixing Tools and Their Uses:

  • K-beater (12): Ideal for making cakes, biscuits, pastry, icing, fillings, éclairs, and mashed potato.
  • Whisk (13): Used for eggs, cream, batters, fatless sponges, meringues, cheesecakes, mousses, and soufflés. It is not recommended for heavy mixtures like creaming fat and sugar, as this could cause damage.
  • Dough hook (14): Specifically designed for yeast mixtures, such as bread dough.

The Kenwood kitchen machine is compatible with a wide array of attachments, expanding its functionality significantly:

  • Pasta Makers: Flat pasta maker (AT970A) and additional pasta attachments (AT971A tagliatelle, AT972A tagliolini, AT973A trenette, AT974A spaghetti) used in conjunction with AT970A. A dedicated pasta maker (AT910) comes with a maccheroni rigati die and can fit 12 optional dies plus a biscuit maker.
  • Food Preparation: Roto food cutter (AT643) with 5 drums, fruit press (AT644), multi food grinder (AT950A/AT955) with fine, medium, and coarse screens, sausage nozzles, and a kebbe maker. A grain mill (AT941A) is also available.
  • Processors: Food processor (AT647) includes 6 cutting discs and a knife blade. A pro slicer/grater (AT340) offers 7 cutting discs.
  • Juicers: Citrus press (AT312) and continuous juicer (AT641).
  • Blenders: Various blenders are available, including 1.5 L acrylic (AT337), 1.6 L thermo resist glass (AT358), and 1.5 L stainless steel (AT339).
  • Specialty Tools: Mini chopper/mill (AT320A) with 4 glass jars and lids, ice-cream maker (CHEF AT956A, MAJOR AT957A), potato peeler (CHEF AT444, MAJOR AT445), colander and sieve (CHEF AT992A, MAJOR AT930A).
  • Accessories: Scale (AT850B), stainless steel bowls (CHEF 36385A, MAJOR 36386A) with handles, splashguard (CHEF & MAJOR 34445A), flexible beater (CHEF AT501, MAJOR AT502), and cover (CHEF 533722, MAJOR 606397).

CHEF Model:

  • Shortcrust pastry: 680g flour (1lb 8oz)
  • Stiff yeast dough: 1.36kg flour (3lb), 2.18kg total weight (4lb 13oz)
  • Soft yeast dough: 1.3kg flour (2lb 14oz), 2.5kg total weight (5lb 8oz)
  • Fruit cake mix: 2.72kg total weight (6lb)
  • Egg whites: 12

MAJOR Model:

  • Shortcrust pastry: 910g flour (2lb)
  • Stiff yeast dough: 1.5kg flour (3lb 5oz), 2.4kg total weight (5lb 5oz)
  • Soft yeast dough: 2.6kg flour (5lb 12oz), 5kg total weight (11lb)
  • Fruit cake mix: 4.55kg total weight (10lb)
  • Egg whites: 16

The appliance is protected by a 13A approved (BS1362) fuse (UK only) and conforms to EC directive 2004/108/EC on Electromagnetic Compatibility and EC regulation no. 1935/2004 on materials intended for contact with food.

Usage Features:

  • Easy Tool Insertion: Tools are inserted by pushing them up until they stop, then turning.
  • Bowl Fitting: The bowl is fitted by pressing down and turning clockwise onto the base, ensuring the bowl seating pad (8) is correctly fitted with the symbol uppermost.
  • Head-Lift Lever (9): Used to raise and lower the mixer head, which locks into position.
  • Speed Control (10): A rotary switch allows for precise speed adjustment from 'min' to 'max', with a 'pulse' (P) setting for short bursts.
  • Splashguard (17): Easily fitted to the underside of the mixer head to prevent splattering during mixing. Ingredients can be added directly through its hinged section (5). It does not need to be removed to change tools.
  • Overload Protection: The mixer is equipped with an overload protection device that will stop the machine if it's overloaded. In such cases, the user should switch off, unplug, remove some ingredients, and allow the machine to rest for a few minutes before restarting.
  • Tool Height Adjustment: If the whisk or K-beater touches the bowl or doesn't reach ingredients, their height can be adjusted using the provided spanner (16). This involves loosening a nut (2) and turning the shaft (3) anti-clockwise to lower the tool or clockwise to raise it. The dough hook is factory-set and typically requires no adjustment.

Maintenance Features:

  • Cleaning: Always switch off and unplug the machine before cleaning.
    • Power unit and outlet covers: Wipe with a damp cloth and dry. Never use abrasives or immerse in water.
    • Bowl: Wash by hand and dry thoroughly, or wash in the dishwasher. Avoid wire brushes, steel wool, or bleach for stainless steel bowls; vinegar can be used to remove limescale. Keep away from heat sources.
    • Tools and Splashguard: Wash by hand and dry thoroughly, or wash in the dishwasher.
  • Cord Stowage: Excess cord can be pushed into the cord stowage compartment at the back of the machine.
  • Service and Customer Care: For servicing, repairs, or help with using the machine, customers in the UK can contact Kenwood Customer Care. Spares and attachments are also available. For other countries, customers should contact the shop where they purchased the machine.
  • Disposal: The product must not be disposed of as urban waste at the end of its working life. It should be taken to a special local authority differentiated waste collection centre or to a dealer providing this service, in accordance with EC directive 2002/96/EC.
  • Guarantee (UK only): The machine is guaranteed for one year from the purchase date, provided it has not been misused, neglected, damaged, modified, second-hand, used commercially, or fitted with an incorrect plug. A receipt is required for proof of purchase.
