Overview

The Kenwood Chef KM300, 400, 410 / Major KM600, 800, 810 is a versatile kitchen machine designed for domestic food preparation, offering a wide range of functions beyond just mixing. It is a robust and reliable state-of-the-art appliance that aims to simplify various cooking tasks.

Function Description

At its core, the Kenwood kitchen machine serves as a powerful mixer, capable of handling a variety of ingredients for baking and cooking. It features multiple outlets for different attachments, expanding its functionality significantly.

The primary mixing function is supported by three main tools:

  • K-beater: Ideal for making cakes, biscuits, pastry, icing, fillings, éclairs, and mashed potato. It ensures thorough mixing of ingredients for a smooth consistency.
  • Whisk: Designed for lighter mixtures such as eggs, cream, batters, fatless sponges, meringues, cheesecakes, mousses, and soufflés. It's important not to use the whisk for heavy mixtures like creaming fat and sugar, as this could damage it.
  • Dough hook: Specifically for yeast mixtures, it kneads dough effectively, saving manual effort.

Beyond mixing, the machine can be equipped with numerous attachments via its high-speed, citrus juicer, and slow-speed outlets. These attachments transform the machine into a multi-functional kitchen aid:

  • Flat pasta maker (A970): Allows for homemade pasta, with additional attachments for tagliatelle (A971), taglionlini (A972), trenette (A973), and spaghetti (A974).
  • Pasta maker (A936): Comes with 6 screens for various pasta shapes.
  • Slow speed slicer/shredder (A948): Equipped with 4 drums for slicing and shredding ingredients.
  • Super mincer (A950): Includes nozzles for large sausages, small sausages, and kebbe maker, enabling meat preparation.
  • Grain mill (A941): For grinding grains.
  • Citrus press (A995): Extracts juice from citrus fruits.
  • Liquidiser (A993A, A994A, A996A): Available in acrylic, glass, or stainless steel, for blending liquids and soft ingredients.
  • Multi-mill (A938A): Comes with 3 glass jars and lids for grinding smaller quantities of ingredients.
  • High speed slicer/shredder (A998): Features 3 cutting plates, with optional plates for extra coarse shredding (639021), rasping (639150), and standard chipping (639083).
  • Continuous juice extractor (A935): For extracting juice from fruits and vegetables continuously.
  • Ice-cream maker (A953, A954): For making homemade ice cream.
  • Potato peeler (A934, A952): Simplifies the task of peeling potatoes.
  • Colander and sieve (A992, A930): For straining and sieving ingredients.

The machine also offers various bowl options, including Kenlyte round bowls (265026, 412095), Kenlyte D-shaped bowls (489969), and stainless steel bowls (638821, 642779), along with corresponding splashguards (444347, 604349) and covers (533722, 606397).

Usage Features

The Kenwood kitchen machine is designed for ease of use, with several features to ensure efficient and safe operation.

Safety First:

  • Always switch off and unplug the machine before fitting or removing tools/attachments, after use, and before cleaning.
  • Keep fingers away from moving parts and fitted attachments.
  • Never leave the machine unattended.
  • Do not use a damaged machine; seek professional repair.
  • Avoid using unauthorised attachments or more than one attachment at once.
  • Always adhere to maximum capacities to prevent overloading.
  • Keep children away from the machine.
  • When using attachments, always refer to their specific safety instructions.
  • The machine is intended for domestic food preparation only.

Getting Started:

  • Before first use, remove all packaging and wash all parts as per cleaning instructions.
  • For UK users, ensure the electricity supply matches the machine's specifications. The cord wires are coloured Blue (Neutral) and Brown (Live).

Operating the Mixer:

  • To raise the mixer head, turn the head-lift lever anti-clockwise until it locks.
  • To insert a tool, turn it until it stops, then push.
  • Fit the bowl onto the base by pressing down and turning clockwise.
  • Lower the mixer head by turning the head-lift lever anti-clockwise until it locks.
  • Select the desired speed using the on/off and speed switch. The 'P' setting is for short bursts (pulse).
  • To remove a tool, simply unscrew it.

Mixing Tips:

  • Always switch off and scrape the bowl frequently with a spatula.
  • Eggs at room temperature are best for whisking.
  • Before whisking egg whites, ensure no grease or egg yolk is present on the whisk or bowl.
  • Use cold ingredients for pastry unless the recipe specifies otherwise.

Bread Making:

  • Never exceed the maximum dough capacities to avoid overloading the machine.
  • If the machine struggles, switch off, remove half the dough, and process each half separately.
  • For best results, add liquid ingredients first.

Speed Control:

  • K-beater: For creaming fat and sugar, start on minimum speed and gradually increase to maximum. For beating eggs into creamed mixtures, use speeds 4 to maximum. For folding in flour, fruit, etc., use minimum to speed 1. For all-in-one cakes, start on minimum and gradually increase to maximum. For rubbing fat into flour, use minimum to speed 2.
  • Whisk: Gradually increase to maximum speed.
  • Dough hook: Start on minimum speed and gradually increase to speed 1.

Troubleshooting (Mixer Height Adjustment):

  • If the whisk or K-beater knocks against the bowl or doesn't reach ingredients at the bottom, adjust its height.
  • Unplug the machine. Raise the mixer head, insert the tool, hold it, and loosen the nut. Lower the head. Adjust the height by turning the shaft until the tool is almost touching the bottom of the bowl. Raise the head, hold the tool, and tighten the nut.

Splashguard (if supplied):

  • To fit, raise the mixer head until it locks. Fit the bowl. Push the splashguard on until fully located, ensuring the hinged section is positioned correctly. Insert the tool. Lower the mixer head, making sure the splashguard follows the bowl's shape.
  • Ingredients can be added directly via the hinged section during mixing.
  • The splashguard does not need to be removed to change tools.
  • To remove, raise the mixer head and slide it down.

Maintenance Features

Proper care and cleaning are essential to maintain the machine's performance and longevity.

General Cleaning:

  • Always switch off and unplug before cleaning.
  • A small amount of grease may appear at the outlets during initial use; this is normal and can be wiped off.

Power Unit:

  • Wipe with a damp cloth, then dry thoroughly.
  • Never use abrasives or immerse the power unit in water.

Bowls:

  • Wash by hand, then dry thoroughly.
  • For stainless steel bowls, never use a wire brush, steel wool, or bleach. Vinegar can be used to remove limescale. Stainless steel bowls can also be washed in the dishwasher.
  • Keep bowls away from heat sources like cooker tops, ovens, and microwaves.

Tools (K-beater, Whisk, Dough Hook):

  • Wash by hand, then dry thoroughly.
  • Discolouration of the K-beater, whisk, and dough hook may occur if placed in a dishwasher.
