Overview

This document provides instructions for the Kenwood Chef and Major KM010 - KM020 series kitchen machines, which are versatile mixers designed for a wide range of kitchen tasks. The manual emphasizes the robust, reliable, and versatile nature of these Kenwood appliances, highlighting their capability to function as state-of-the-art kitchen machines with various attachments.

Function Description

The Kenwood Chef and Major kitchen machines are primarily designed for mixing, kneading, whisking, and processing food with a variety of attachments. The core unit, or power unit, features multiple outlets for different attachments, allowing it to perform a multitude of functions beyond basic mixing.

Mixing Functions: The mixer head houses a tool socket where various mixing tools can be attached. These tools include:

  • K-beater: Ideal for making cakes, biscuits, pastry, icing, fillings, éclairs, and mashed potato. It's designed to reach all ingredients in the bowl effectively.
  • Whisk: Used for lighter mixtures such as eggs, cream, batters, fatless sponges, meringues, cheesecakes, mousses, and soufflés. It's important not to use the whisk for heavy mixtures like creaming fat and sugar, as this could damage it.
  • Dough Hook: Specifically designed for yeast mixtures, facilitating the kneading process for bread making.

The machine offers a speed switch with settings from 'min' to 'max', including a 'pulse' setting for short bursts of power. This allows for precise control over the mixing process, adapting to different ingredients and desired consistencies. For instance, creaming fat and sugar starts on 'min' and gradually increases to 'max', while folding in flour or fruit is done at 'min' to 1.

Attachment Outlets: The Kenwood kitchen machine is equipped with three main attachment outlets:

  • High-speed outlet: For attachments requiring high rotational speed.
  • Medium-speed outlet: For attachments operating at a moderate speed.
  • Slow-speed outlet: For attachments that require a slower, more controlled speed.

These outlets enable the use of a wide array of optional attachments, transforming the mixer into a comprehensive kitchen machine. Examples of available attachments include:

  • Flat pasta maker (AT970A) and additional pasta attachments (AT971A-AT974A): For making various types of pasta like tagliatelle, tagliolini, trenette, and spaghetti.
  • Pasta maker (AT910): Comes with maccheroni rigati die, with optional dies and a biscuit maker available.
  • Roto food cutter (AT948A): Equipped with four drums for slicing and shredding.
  • Multi food grinder (AT950A): Includes large and small sausage nozzles and a kebbe maker for preparing minced meat and sausages.
  • Grain mill (AT941A): For grinding grains.
  • Citrus juicer (AT312): For extracting juice from citrus fruits.
  • Food processing attachment (AT640): Includes three cutting plates and a knife blade for various food preparation tasks.
  • Pro slicer/grater (AT998A): Also includes three cutting plates as standard, with optional plates for extra coarse shredding, standard chipping, and rasping.
  • Liquidiser (AT337/AT338): Available in 1.5 L acrylic or glass versions for blending liquids.
  • Multi-mill (AT320): Comes with four glass jars and lids for grinding spices, nuts, and herbs.
  • Non-stop centrifugal juicer (AT935A): For continuous juicing of fruits and vegetables.
  • Ice-cream maker (AT956/AT957): For making homemade ice cream.
  • Potato prep attachment (AT934A/AT952A): For peeling potatoes.
  • Colander and sieve (AT992A/AT930A): For straining and sieving.

Usage Features

The Kenwood kitchen machine is designed for ease of use with several practical features:

Head-lift Mechanism: The mixer head can be raised and lowered using a head-lift lever. To raise the head, turn the lever clockwise until it locks in the raised position. To lower it, turn the lever clockwise again and gently lower the head until it locks into place. This mechanism facilitates easy insertion and removal of mixing tools and the bowl.

Tool Insertion and Removal: To insert a tool, raise the mixer head, push the tool up into the socket until it stops, and then turn it to secure. To remove, simply turn and pull down.

Bowl Attachment: The bowl is fitted onto the base by pressing it down and turning it clockwise until it locks securely.

Speed Control: The on/off and speed switch allows users to select the desired speed for different tasks. The 'P' (pulse) setting provides short bursts of power, useful for quick mixing or chopping.

Splashguard: A splashguard (693766) is available for both Chef and Major models. To fit it, raise the mixer head, fit the bowl, and then push the splashguard onto the underside of the mixer head until fully located, ensuring the hinged section is correctly positioned. Ingredients can be added directly to the bowl through the hinged section of the splashguard during mixing, eliminating the need to remove it when adding ingredients or changing tools.

Overload Protection: The mixer is equipped with an overload protection device. If the machine is overloaded, it will automatically stop to prevent damage. In such a case, the user should switch off and unplug the mixer, remove some ingredients to reduce the load, and allow the mixer to stand for a few minutes before restarting. If it doesn't restart immediately, allow additional time.

Recipe Guidelines: The manual includes specific guidelines for various recipes, such as bread making, shortcrust pastry, pavlova, chocolate cake, chocolate mousseline filling, and honey and nut spread. These guidelines often specify the appropriate mixing tool, speed settings, and maximum capacities to ensure optimal results and prevent overloading the machine. For example, when making bread, it's crucial not to exceed the maximum flour and total weight capacities to avoid straining the motor.

Maintenance Features

Proper care and cleaning are essential for maintaining the longevity and performance of the Kenwood kitchen machine.

Cleaning the Power Unit and Outlet Covers: The power unit and outlet covers should be wiped with a damp cloth and then dried thoroughly. It is important never to use abrasives or immerse these parts in water.

Cleaning the Bowl: The stainless steel bowl can be washed by hand or in a dishwasher. To remove limescale, vinegar can be used. Users are advised against using a wire brush, steel wool, or bleach, and to keep the bowl away from heat sources like cooker tops, ovens, and microwaves.

Cleaning Mixing Tools: Stainless steel tools can be washed by hand or in a dishwasher. Non-stainless steel (coated) tools should only be washed by hand and dried thoroughly to preserve their coating.

Cleaning the Splashguard: The splashguard should be washed by hand and dried thoroughly.

Cord Storage: Excess cord can be pushed into the cord stowage compartment at the back of the machine for neat storage.

Troubleshooting: The manual provides solutions for common issues, such as the whisk or K-beater knocking against the bowl or not reaching ingredients at the bottom. This typically requires adjusting the tool's height by loosening a nut, adjusting the shaft, and then re-tightening.

Service and Customer Care: In case of a damaged cord, it must be replaced by Kenwood or an authorized Kenwood repairer for safety reasons. The manual provides contact details for Kenwood Customer Care and for ordering spares and attachments, advising users to have their model number ready.

Guarantee: The product comes with a one-year guarantee in the UK, covering repairs or replacements free of charge, provided the machine has not been misused, neglected, damaged, modified, used commercially, or fitted with an incorrect plug. Proof of purchase (receipt) is required for guarantee claims.
