This document is a Use & Care Guide for KitchenAid SUPERBA® Built-In Electric Convection Single and Double Ovens, covering models KEBS107, KEBS177, KEBS207, KEBS277, KEBS208, and KEBS278 (W10162180A).

Function Description:

The KitchenAid SUPERBA® Built-In Electric Convection Ovens are designed for baking, roasting, broiling, and convection cooking. They offer both single and double oven configurations, providing flexibility for various cooking needs. The convection feature utilizes a fan to circulate hot air, ensuring more even cooking, crispier surfaces, and faster cooking times compared to traditional thermal ovens. The ovens also include a self-cleaning cycle for convenient maintenance and a Sabbath Mode for religious observance.

Important Technical Specifications:

  • Temperature Range (Bake/Roast/Convection Bake/Convection Roast/Convection Broil): 170°F (77°C) to 500°F (260°C).
  • Temperature Range (Dehydrating): 100°F (38°C) to 200°F (93°C).
  • Temperature Range (Bread Proof): Fixed at 100°F (38°C).
  • Temperature Probe Range: 130°F (55°C) to 190°F (85°C).
  • Oven Lights: 12-volt, 5-watt maximum halogen bulbs.
  • Self-Cleaning Cycle Times:
    • Quick: 2 hours 30 minutes
    • Regular: 3 hours 30 minutes
    • Maxi: 4 hours 30 minutes
    • Includes a 30-minute cool-down time.
  • Convection Element: T.H.E.™ (Third Hidden Element) located in the rear panel, assisted by a convection fan.

Usage Features:

  • Electronic Oven Control: Intuitive interface for setting cooking functions, temperatures, and times.
  • Fahrenheit and Celsius Settings: Temperature display can be toggled between Fahrenheit and Celsius.
  • Tone Volume Control: Audible signals (beeps, chimes) can be set to high or low volume.
  • All Tones On/Off: All audible signals can be turned on or off.
  • End-of-Cycle and Reminder Tones: Can be independently turned on or off (unless all tones are off).
  • Control Lock: Locks the control panel keys to prevent unintended use, remaining active even after a power failure.
  • Oven Temperature Calibration: Allows adjustment of oven temperature to cook faster or slower, in 10°F (5°C) increments.
  • Sabbath Mode: Allows the oven to remain on in a bake setting for extended periods, with specific restrictions on display and controls to comply with religious observances. It can be set for untimed or timed durations.
  • Timed Cooking: Allows setting the oven to turn on at a specific time, cook for a set duration, and/or shut off automatically. Delay start is available but not recommended for certain foods like breads and cakes.
  • Convection Cooking: Offers Convection Bake, Convection Roast, and Convection Broil modes. Recipes often require a 25°F (14°C) temperature reduction and potentially shorter cooking times.
  • EasyConvect™ Conversion: Automatically converts standard recipe temperatures and times for convection cooking for various food categories (Baked Goods, Meats, Other Foods).
  • Temperature Probe: Measures the internal temperature of meat, poultry, and casseroles, automatically shutting off the oven when the set temperature is reached.
  • Proofing Bread: Provides an optimal environment for dough to rise, set at 100°F (38°C).
  • Dehydrating: Uses low heat and air circulation to preserve food, with a temperature range of 100°F (38°C) to 200°F (93°C). The oven automatically turns off after 12 hours in this mode.
  • Rack Positioning: Guidelines are provided for optimal rack placement for traditional and convection cooking, including single, double, and triple rack usage.
  • Roll-Out Rack: Allows easy access to food, can be positioned on rack guides 1 through 4.
  • Bakeware Recommendations: Chart provided to guide users on bakeware material and finish for best cooking results, including adjustments for temperature and time.
  • Meat Thermometer (not supplied): Instructions for proper use to determine doneness of meats and poultry.

Maintenance Features:

  • Self-Cleaning Cycle: Uses very high temperatures to burn soil to a powdery ash, which can then be wiped away. Different cleaning levels (Quick, Regular, Maxi) are available.
    • Preparation: Remove racks, broiler pan, grid, cookware, bakeware, and temperature probe. Wipe out loose soil. Hand clean door gasket area.
    • Restrictions: Do not touch the oven during the cycle. Do not clean the door gasket. Do not use oven cleaners. Only one oven can self-clean at a time on double oven models.
  • General Cleaning:
    • Stainless Steel: Clean with KitchenAid® Stainless Steel Cleaner and Polish or liquid detergent/all-purpose cleaner. Vinegar can be used for hard water spots. Avoid abrasive cleaners, steel-wool pads.
    • Oven Door Exterior: Clean with glass cleaner and a soft cloth or All-Purpose Appliance Cleaner. Avoid applying cleaner directly to the panel.
    • Oven Door Interior: Wipe away deposits with a damp sponge before running a self-cleaning cycle.
    • Control Panel: Clean with glass cleaner and a soft cloth or All-Purpose Appliance Cleaner. Avoid abrasive cleaners, steel-wool pads.
    • Oven Cavity: Clean food spills when the oven is cool. Do not use oven cleaners.
    • Oven Racks and Roasting Racks: Can be cleaned during the self-cleaning cycle (though they may discolor and become harder to slide, requiring vegetable oil for lubrication) or with a steel-wool pad.
    • Broiler Pan and Grid: Do not clean in the self-cleaning cycle. Clean with mildly abrasive cleanser, wet scouring pad, or a solution of ammonia and water. Porcelain enamel parts are dishwasher safe.
  • Oven Lights: Halogen bulbs that turn on when the door is opened or can be toggled with the OVEN LIGHT button. Instructions for replacement are provided, including disconnecting power and handling bulbs with tissue or cotton gloves.
