Overview

The NU-VU® QB is an electrically powered and operated commercial baking/cooking appliance, specifically designed as a combination oven and proofer. It is manufactured by NU-VU® Food Service Systems, located at 5600 13th STREET, MENOMINEE, MICHIGAN 49858-1029. The models covered by this manual are the QB-4/8 and QB-5/10.

Function Description:

The NU-VU® QB is designed for both baking and proofing, offering a versatile solution for food service operations. The oven section utilizes a patented V-AIR® air movement system, where a top-mounted blower circulates air down through side walls and out through specially designed hole patterns. This ensures even heat distribution throughout the oven, allowing for uniform baking from top to bottom, side to side, and front to back without the need to turn pans. This design enables users to load the oven completely with pans of the same product and bake them simultaneously. The proofer section is designed to provide controlled temperature and humidity for optimal proofing of dough products. It can be operated with a manual water fill or, for AUTOFILL units, connected to a pressurized potable water supply. The immersible element in the AUTOFILL water pan ensures even humidity distribution.

Capacities:

  • QB-4/8 Oven: Four (4) 18" x 26" (457mm x 660mm) full size sheet pans with 5" (127mm) spacing.
  • QB-4/8 Proofer: Eight (8) 18" x 26" (330mm x 457mm) full size sheet pans with 3-1/2" (88mm) spacing.
  • QB-5/10 Oven: Five (5) 18" x 26" (457mm x 660mm) full size sheet pans with 4" (102mm) spacing.
  • QB-5/10 Proofer: Ten (10) 18" x 26" (330mm x 457mm) full size sheet pans with 3-1/4" (83mm) spacing.

Construction:

The unit is constructed of stainless steel both inside and out. Front and back frames are cut from single sheets of stainless steel. Components such as temperature and humidity controls, timers, switches, motors, and heating elements are thoroughly tested.

Electrical Connections:

  • Voltages: 208V, 230V, 240V (60 Hz) - Single or three phase; 380V, 415V (50 Hz) - Three phase. No separate neutral is required for 208V/230V/240V, but is required for 380V/415V.
  • Oven Heating Elements: Two 3,500-watt elements.
  • Proofer Heating Elements (AUTOFILL): Two 600-watt elements and one 500-watt humidity element.
  • Hard-wired on site. Must match power source requirements listed on the unit label.

Water Connection (for AUTOFILL units):

  • Requires direct connection to a pressurized potable water supply via 1/4" (6.35mm) OD plastic or copper tubing.
  • Minimum water pressure: 20 PSI (131 kPa).
  • Maximum water pressure: 100 PSI (689 kPa).
  • Equipped with a 1/4" (6.35mm) push-to-connect fitting on the back.
  • NU-VU® strongly recommends using SOFT WATER ONLY and installing a good quality water filter to prevent clogging and mineral build-up.
  • Requires a screen of at least 100 mesh upstream of all check valve type backflow preventers.

Usage Features:

  • Automatic Pan Positioning: Simplifies loading and ensures proper airflow.
  • Rapid and Even Baking: Achieved through the V-AIR® air movement system, eliminating the need to turn pans.
  • Simple Operation: User-friendly controls for temperature, humidity, and timers.
  • Proofer Pre-heating: Recommended 20-30 minutes before use.
  • Oven Pre-heating: Takes 15-20 minutes to reach desired temperature.
  • Loading: Load oven from top down, placing a single full-size pan on each shelf, pushed to the rear and centered.
  • Door Operation: Oven door stops blower wheel when opened, restarts when closed securely. Keeping doors closed maintains temperature, reduces baking time, and minimizes energy usage.
  • Manual Fill Proofer: Water can be added to the water pan via a chute on the right-hand proofer ladder when the humidity indicator light blinks.
  • Drain Pan: A drain in the proofer compartment floor prevents excess water accumulation, with an included drain pan to catch draining water.
  • Safety: Not intended for use by persons (including children) with reduced physical, sensory or mental capabilities, or lack of experience and knowledge, unless supervised. Children should be supervised to prevent play with the appliance.
  • Venting: Does not typically require exterior venting, but local codes should be consulted.
  • Securing: If required by code, the appliance must be secured to the building structure using an eyebolt and wire rope lanyard or welded steel chain.

Maintenance Features:

  • Easy Cleaning: Constructed of stainless steel for easy cleaning.
  • Low Maintenance: Designed for durability with sealed bearings in oven and proofer motors, eliminating the need for lubrication.
  • Dry-Out Procedures: Daily dry-out procedures are crucial for maximum equipment life.
    • AUTOFILL Proofer Dry-Out: Wipe standing water, empty/clean/replace drain pan, turn Proofer Power Switch ON (temperature at normal setting, humidity dial OFF), leave door open 1-2 inches for 20-30 minutes until dry, then turn OFF and leave door slightly open when not in use.
    • Oven Dry-Out: Turn Oven Power Switch OFF, leave door open 1-2 inches to allow residual heat to dry out moisture. Leave door slightly open when not in use.
  • Cleaning Guidelines:
    • Exterior: Clean with stainless steel cleaner/polish or hot soapy water.
    • Glass: Clean with glass-cleaning formula; baked-on soil can be removed with soap and hot water.
    • Interiors (oven/proofer): Clean with mild soap and hot water.
    • WARNING: DO NOT use oven cleaners in the oven, as they are difficult to remove and can cause smoke/noxious fumes.
    • AUTOFILL Proofer Water Pan: Inspect and clean regularly (weekly recommended) to prevent lime and mineral accumulation.
    • CAUTION: DO NOT use strong commercial or caustic products on aluminum parts, silicon rubber door gaskets, or sealing compounds, as they can cause discoloration and degradation. DO NOT use bleach on chromed parts. DO NOT clean with a water jet or pressure washer.
    • Recommended Cleaner: JIFFY CLEANER (Part #51-0002) is recommended for general cleaning.
  • Door Gasket Replacement: Instructions provided for easy replacement of oven and proofer door gaskets. Gaskets are supplied as single formed pieces and are pressed into place.
  • Serviceability: Designed for quick and easy servicing by individuals with average mechanical ability. Service Department available for assistance, parts, and troubleshooting.
  • NSF Guidelines: All interior parts are removable without tools for cleaning and maintenance. After service, interior sheet metal parts should be reassembled hand-tight only, but tight enough to prevent rattling.
