Step 4
Place the control switch in the “WASH” position.
This will cause the sanitizing solution in the freezing
cylinder to agitate. Allow the solution to agitate for
five minutes.

Step 5
Place an empty pail beneath the door spout and
raise the draw arm. Draw off all the sanitizing
solution. When the sanitizer stops flowing from the
door spout, lower the draw arm and place the control
switch in the “OFF” position.
IMPORTANT: The unit must NOT be placed in
AUTO until all sanitizing solution has been removed
from the freezing cylinder and proper priming
procedures have been completed. Failure to follow
this instruction may result in damage to the freezing
cylinder.
Note: You have just sanitized the freezer;
therefore, be sure your hands are sanitized
before going on in these instructions.
Step 6
Assemble the hopper gasket around the top edge of
the mix hopper. Stand the air tube in the corner of
the mix hopper.

Priming
Prime the machine as close to the time of first
product draw as possible.
Step 1
With a pail beneath the door spout, raise the draw
arm. Pour two gallons (7.6 liters) of FRESH mix into
the hopper and allow it to flow down into the freezing
cylinder. This will force out any remaining sanitizing
solution. When full strength mix is flowing from the
door spout, lower the draw arm.
Step 2
When the mix has stopped bubbling down into the
freezing cylinder, and the mix out probe is satisfied,
install the air tube in the mix inlet hole.
