This document is a Use and Care Guide for a Wolf Dual Fuel Range, providing comprehensive information on its operation, features, maintenance, and troubleshooting. The range combines gas surface cooking with an electric convection oven, offering a versatile cooking experience.
Function Description:
The Wolf Dual Fuel Range is designed for both casual cooks and expert chefs, offering a variety of cooking modes and features for diverse meal preparations. It includes gas surface burners for precise stovetop cooking and an electric convection oven with multiple cooking modes. Optional surface accessories like a charbroiler, griddle, and French top further expand its cooking capabilities. The oven features an interactive touch screen control panel, a cooking mode selector bezel, and an oven temperature control knob for intuitive operation.
Important Technical Specifications:
- Oven Cooking Modes: Bake, Roast, Broil, Convection Roast, Convection, Gourmet, Proof, Stone, Dehydrate, and Warm.
- Temperature Control: For Bake, Roast, Broil, Convection Roast, Convection, Gourmet, and Stone modes, a slight rotation of the control knob adjusts the temperature by 5°F (1°C), while a full rotation adjusts by 25°F (5°C). For Proof, Dehydrate, and Warm modes, a slight rotation adjusts by 1°, and a full rotation by 5°.
- Surface Burner Ratings: The front left burner is 20,000 Btu. Additional front burners to the right are 18,000 Btu. The rear left burner is 9,200 Btu. Additional rear burners to the right are 15,000 Btu.
- Griddle Temperature Range: 100°F–450°F.
- Oven Light: Uses a 40-watt halogen bulb.
- Anti-Tip Device: Essential for safety, ensuring the appliance is stable.
- Gas Connector: If flexible, must not exceed 3' (0.9 m).
- Self-Clean Cycle: Approximately four hours.
Usage Features:
- Oven Racks: Includes standard and full-extension racks with anti-tip locks for secure placement. Rack guides are installed using mounting screws on the oven side walls.
- Control Panel: Interactive touch screen for selecting cooking modes and other functions. It must be open to access Gourmet mode and exclusive features.
- Gourmet Mode: Offers six categories (Meat, Fish, Baked Goods, Pizza, Vegetables, One Dish Meals) with recommended rack positions, cooking modes, and automatic temperature adjustments. It does not automatically turn off when cooking is complete.
- Temperature Probe: Measures internal food temperature and can be used with all cooking modes except Broil, Proof, and Dehydrate. It allows monitoring without setting a desired temperature.
- Clock and Timer: The clock is visible during all cooking modes and can be set for 12 or 24 hours. It sets automatically if connected to Wi-Fi. Two independent timers can be set for up to 11 hours and 59 minutes.
- Auto Program (Timed Cook & Delayed Start):
- Timed Cook: Automatically turns the oven off at a specified time. Preheat time must be accounted for. Not available for Broil, Gourmet, or Stone modes, and cannot be used with the temperature probe.
- Delayed Start: Automatically turns the oven on and off at specified times. The oven remains idle until the desired start time. Preheat time must be accounted for. Not available for Broil, Gourmet, or Stone modes, and cannot be used with the temperature probe.
- Sabbath Mode: Certified by Star-K, allowing Bake, Roast, Proof, and Warm modes to be used in accordance with religious regulations. Temperature changes randomly after selection to avoid specific temperature settings.
- Surface Burners: Lighted by pushing and turning the control knob counterclockwise to Hi. The igniter clicks until the burner lights. A light halo around the bezel illuminates when the burner is on. Simmer settings are available. Manual lighting is possible during power outages.
- Charbroiler: Infrared burner for intense heat, searing food directly on the grate. Requires 10 minutes of preheat. Do not use cookware.
- Griddle: Thermostatically controlled infrared griddle for consistent temperature. Requires "seasoning" prior to use to prevent sticking. Double griddle has separate controls.
- French Top: Graduated cooking surface with the highest temperature under the center plate. Always use cookware, not direct food contact. Requires "seasoning" prior to use and 30 minutes of preheat. The center plate can be removed for cleaning using a provided hook.
- Connectivity: Can be connected to Wi-Fi via the Sub-Zero Group Owner app for remote monitoring and control.
Maintenance Features:
- Cleaning:
- Stainless Steel: Use a nonabrasive cleaner and soft, lint-free cloth, wiping with the grain.
- Oven Racks & Guides: Clean with hot water and mild detergent or a baking soda paste. Do not immerse in water.
- Burner Grates & Pan: Clean with hot water and mild detergent or a baking soda paste. For hard water stains on the burner pan, use white vinegar and water.
- Surface Burners: Allow to cool, then clean with mild detergent or spray degreaser.
- Charbroiler: After cooking, leave on for 10 minutes to burn off excess food. Once cool, remove grate, soak in hot water with wet dish towels, then clean with soap and a scouring pad.
- Griddle: Scrape grease into the collection tray after each use. Wipe with paper towel. Season with peanut or vegetable oil. Periodically remove seasoning and clean with warm water and griddle cleaner.
- French Top: Clean the entire surface when slightly warm with mild detergent and water. Season with peanut or vegetable oil. Periodically remove seasoning and clean with white vinegar and water.
- Control Knobs: Wipe with a damp cloth and mild detergent or spray degreaser. Do not place in dishwasher.
- Control Panel: Lock the panel, then use spray degreaser on a cloth to clean. Do not spray directly.
- Oven Interior: Remove food spills (especially sugary, acidic, tomato-based) when cool. For stubborn stains, use a razor blade, mild abrasive cleaner, or spray degreaser with a no-scratch pad. Clean thoroughly with soap and water before using the self-clean function.
- Broiler Pan: Clean the rack with mild detergent and scouring pad. Discard grease from the pan and wash with hot water and mild detergent.
- Self-Clean Function: Heats the oven to an extremely high temperature to burn off food soil. Oven lights are disabled. Oven racks and rack guides must be removed before self-clean. The oven door locks until the cycle is complete and the temperature is below 550°F (290°C). Delayed Clean option is available.
- Oven Light Replacement: Allow the oven to cool, remove racks and guides, then gently pry the bottom edge of the light cover. Replace with a 40-watt halogen bulb, avoiding bare hand contact. For the top oven light, contact Wolf Factory Certified Service.
